? 1.看起來好吃
1-1.觀察老闆在煎蚵仔煎的時候有沒有用心在煎,蛋、粉漿、蚵仔、菜是否同時成熟。
1-2.要一份一份獨立煎,不能煎一大盤再分切成好幾份,這樣蚵仔煎才會由內而外的層次感,外圈酥而內圈軟,如果不是也不用吃了。
1-3.完成後要像蛋包飯一樣,蛋在上粉在中蚵仔及菜在下,蛋、粉厚度比例1:2,中間比較厚的地方是1:3,呈現有點鼓起的形狀。
1-4.筷子夾下去的時候要在2~3下左右夾斷,而且要帶有彈性又不能太黏,也不能一夾下去就切斷。
1-5.觀察座位上的客人,在吃的時候是不是帶有好吃、滿足、感謝食材的表情,而不是眼神空洞吃飽就好的表情。
