本次菜色:
1、海螺清湯
(脆脆的海螺切片,喝完瞬間暖胃了起來)
2、日本九州縞鰺Shima Aji魚
(縞鰺脂肪結實、肉質肥嫩、鮮甜可口,還有點點稻香味,也有壽司行家說:「夏天吃縞鰺,冬天吃寒鰤」,吃得到這麼頂級量少的食材,真的很棒ㄚ)
3、日本九州海道比目魚
(肉質吃起來算稍為韌ㄧ點,但ㄧ樣新鮮好吃)
4、宜蘭白鰭魚
(師傅採用切碎處理,吃起來的口感會比較軟嫩)
5、日本本州青森縣大間延繩大間黑鮪魚中腹(真的是軟嫩入口即化!!!是日本本州最北端的青森縣大間町,向來以「大間鮪魚」的黑鮪魚聞名,真的大推薦)
6、大間黑鮪魚大腹
(入口即化肉質肥美軟嫩,真的是超滿足)
7、大間黑鮪魚刺身
(有點柑橘香軟嫩,真的是大間鮪魚吃到爽的概念,幸福ㄚ)
8、小鰶
(光看就覺得好吃,光澤度滿分,口感也很好。小鰶在日本被視為江戶前壽司的代表壽司,也是壽司界的橫綱,小鰶壽司的優劣也是衡量一家壽司店好壞的關鍵)
9、烤目光魚
(烤的超軟嫩,肉質異常的細緻,真的很像baby的嫩膚,偶爾有點微小刺)
10、海膽生筋子
(海膽+生筋子沒辦法抗拒的必吃?)
11、虎河豚白子
(自己很喜歡吃白子類的,這ㄧ點腥味都沒有,ㄧ樣很滑嫩,好吃)
12、北海道馬糞海膽
(超大塊的馬糞海膽,爽~在海膽漲價到誇張的時候,吃的到真的很開心)
13、松葉蟹
(蟹類免剝殻就是讚,這道吃起來有滿滿的海味,鮮甜不在話下)
14、屏東的烤鰻魚
(外酥脆味香濃,烤的好好吃)
15、高湯鹹玉子燒
(玉子燒做鹹的口味,吃起來很特別,可以跟甜的玉子燒比較差異,不過還是比較習慣甜的口感,比較有記憶點)
16、菇菇味噌湯
(生食吃多了,又到了暖胃時間?)
17、玉子燒
(壽司都會有的甜點,這裡是蜂蜜口味的,可以看到玉子燒細緻的切面)
18、金箔白玉抹茶冰淇淋
(個人超愛這道甜品,抹茶冰淇淋好好吃ㄚ,不是那種甜死人的抹茶,也不是甜死人的紅豆餡,搭配起來很清爽,抹茶微苦中帶點紅豆甜味,我還吃了2個,太開心了)
19、招待特製炸物
(師傅的拿手下酒菜,會忍不住ㄧ根接一根)
20、滿滿滿金箔海膽鮪魚蛋糕
(這個金箔海膽鮪魚蛋糕真的太過份了,ㄧ出來,大家搶著拍照,吸睛程度100%)

A foodie who loves Japan, visiting sushi restaurants in Tokyo and Kyoto is a must and I have tried out a few star-studded ones. 鰭崤sushi restaurant in Taipei is not far from getting a star very very soon.
Every single visit, it guarantees the freshest seasonal ingredients, the rightly seasoned sushi rice, service that is friendly and puts you at ease and now the perfect ambience that is zen and subtly luxurious. Visiting 鰭崤means a perfect Japanese sushi meal. From the sashimi starter, the sushi, miso soup that’s delicious and aromatic to the final matcha dessert and hojicha that is smoked right in front of you that wraps up the night, it never disappoints.
