小弟我的犯錯日誌,歡迎新來的客人詳讀後再過來。 1/22日,這是今天我所犯下的錯誤,身為一家麵店,竟然發生麵體不熟的狀況,而且不只一碗,實在是對不起這麼多支持我的客人。 雖然網路評分是相當多人選擇一家店的依據,對我來說是相當重要,我非常看重每一位客人給我的回饋,但是若不能完整真實呈現每一種狀況,這種分數也是假的。 對各位客人是沒用的,那就我必須要讓之後每一位客人知道,有用素食店曾經發生過麵體不熟的狀況,而且不只一碗。 面對這次問題,我要修正的是要依麵體的狀況去調整時間,而非單靠時間來煮,這是我學習到相當嚴重卻是相當寶貴的經驗。 2/9日,小弟我又釀下大錯,面對相當多的訂單,我還把時間排得太近,分量跟數量也抓得不太準,導致讓客人在現場等待時間過長,以下是思索自己的錯誤後得到的結論,還請各位指教跟見諒。 思索我所犯下的錯誤後,有了一些對應辦法,跟各位提前公布一下。 辦法一:面對訂單,我一定會先做LINE預定單與電話預訂單,現場單只能排到後面,等待的時間也無法預估,但是我會穿插預定單的時間來做現場單。現場來的好友們先跟你們說聲對不起了。 若辦法一掌控不了,就升級到 辦法二 辦法二:當天訂單若超出我能控制的量後,我會不定時將在某個時段內【停止接單】,停止接單的時段內,小弟我會專心做好LINE預訂單與電話預訂單。 若想來現場點餐的好友們看到櫃檯擺出【停止接單】,就表示20分鐘內沒辦法接單 辦法二是我最不想看到的辦法,因為我的速度慢導致現場來的好友無法點餐,實在是對不起。 辦法三:老婆看到有用好友們這麼支持小弟我,決定帶著小孩來現場幫忙,雖然不一定是天天來,但能減少辦法二的情況發生次數,幫忙時間大約40分鐘至1個小時不定,真的非常感謝老婆拔刀相助!!! 希望以上辦法能也有效解決今天我所犯下的錯誤。
