白豆沙餅的內餡甜度比坊間的稍低一點,但令我驚艷的是它的皮!! 我極不愛吃中式餅的外皮,通常都剝掉丟掉 (非常討債 ?); 巧芳的白豆沙餅皮卻酥到我連屑屑都不放過!! 蛋黃酥的豆沙餡軟綿、蛋黃大顆; 副作用是,每次晚上來一顆,隔天早上量體重,數字絕對往上跑! ?

2022.03.25 = ★★★★✪ ◉推薦:咖哩酥、蛋黃酥。 ◉簡評:不起眼的小店,但是便宜的價格下,蛋黃酥跟咖哩酥都會讓人眼睛一亮。? ===================== 蛋黃酥第91間,來到巷弄間的【巧芳】。原本是想到外觀看起來比較時尚的【峰焙麵包】,但看到評論說【巧芳】的蛋黃酥跟咖哩酥很好,心動,試試。到訪【巧芳】,門面真的是.....很像舊時路邊的柑仔店,陰暗的燈光,要不是專程來實在很難讓人走進去;老闆娘態度算是親切。 ☑蛋黃酥?40 = 用烤箱微微加熱,外觀上看起來餅皮多層次,但口感不太酥,餅皮部分確實如評論說的,不太行。不過,內部內餡就不一樣,紅豆泥相當細緻且濕潤,口感甚至稍稍黏稠,不輸給一線品牌賣得很貴的【犁記】等店,有明顯紅豆香氣,黏的口感甚至有點像是麻糬;另外蛋黃潮濕且香氣驚人,跟紅豆泥融合再一起,相當不錯,就是皮的部分缺點太明顯,5.5分。 ☑咖哩酥?32 = 用烤箱微微加熱;光切開時,就能感受到外皮的酥度;外皮有層次,有酥;內部咖哩餡料,口感濕潤,偏重但是富有層次的咖哩讓綠豆的香氣反而突出,味道有辛香而不過度辛辣,間雜的小魯肉塊,應該是腿肉,稍微有硬度但不會過為乾柴;整個咖哩酥非常有水平,5.5分。才32元根本佛心了。隔天再稍稍加熱一點,內餡幾乎變成半泥狀,真的頗優,6分。 ☑老婆餅?25 = 老闆娘一直推薦就買了,看起來飽滿胖胖的,還不差。一咬,外皮多層次,但稱不上酥;咀嚼,餅香越發明顯,內部的熟糯米餡料,微甜,口感自然,4.5分,還行。
