★ ★ ★ ★ ★ 有這麼一個傳說是,小草可以天天吃河粉。
不過傳說終究是傳說,小草頂多也就是兩天吃一次而已。
回歸正題,他家私廚。一間河粉專賣店。
在踏進去之前,或是在google告訴你之前,看著店名,看著環境,很難想到他是一間河粉專賣店。
店面內推,外面有一個小花園,整片落地窗營造出來的效果堪比西餐廳,晚上靠著窗吃飯,可以看見窗戶投影出店內的旋轉樓梯,感覺相當愜意。
此次前來,我們點了招牌牛肉河粉、招牌雞肉河粉、蝦子生春捲。
招牌牛肉河粉(NTD 400)裡面我可以確定的的部分有生牛肉、牛腱片、牛肉丸、牛筋、牛鞭、還有一些不確定的部位。除了牛腱以外,每個部位都很好吃,牛筋軟而不爛;生肉片很嫩很新鮮;牛肉丸入口全是牛肉的香甜,口感很棒。
河粉本體完全無法給出任何負面評價,軟硬適中,使用的也是傳統的河粉 ((有些河粉店會出現粄條= = ))
湯頭是他家私廚中得到我最高分的部分,我是一個吃到味素舌頭會腫的人,所以河粉的湯通常我不會喝太多。但是他家私廚的湯我喝第一口就知道沒問題der。鮮甜、牛味十足、沒有魚露味、台南的牛肉湯,大概是我能想到最接近的形容了。有些東西的美味是沒有辦法用言語形容的,至少對我來說這個湯就是這樣。他家私廚的湯與其他的河粉店有做出差異性。
除了肉湯麵以外,值得一提的是生洋蔥跟熟豆芽。生洋蔥讓湯多了一個鮮甜,但是配著麵吃到的時候有點辣,不小心就出戲了XD ;熟豆芽就相反了,雖然缺乏了爽脆的口感,但是口味上會與麵湯一致 ((請給熟豆芽一個掌聲)) 。
招牌雞肉河粉 (NTD 400),這碗我只吃了三口,也是驚艷的三口。
第一口,湯的部分跟牛肉河粉完全不同,使用的是雞湯。外面許許多多的河粉店,無論是什麼肉,都是同一種湯,但是他家私廚的雞肉河粉明顯使用的是雞湯,也很好喝。對莊先生來說,牛雞是難分高下;對我來說,還是牛肉稍微勝出。
第二口,雞肉嫩而不柴,口味清淡,非常清淡,配上雞湯的淡雅,我覺得相當合適。
第三口,河粉,原本以為會和牛肉河粉吃起來完全相同,但是雞肉河粉吸附著雞湯,味道截然不同,這個部份我認為雞肉河粉大大的壓過牛肉河粉入口的效果跟帶來的感受。
蝦子生春捲 (NTD 100),醬料是基本的魚露檸檬汁。生春捲內除了米線、蝦子、紅蘿蔔,還包了紫蘇葉。口感很好,米紙不會太乾,紫蘇葉的味道微微搶過主角,喜歡紫蘇葉的人可能會覺得很好吃。我個人是希望紫蘇葉離開我的春捲XD
冗冗長長的說了一番,結論是,很好吃,有錢可以來吃。河粉400好像很貴,但是牛肉麵500也是有人吃。這個環境這個內容物,絕對有400的價值。而且老闆娘(?)很正,聲音很好聽,活潑又有禮貌。如果鄉民們覺得只有河粉CP不夠高,可以加上老闆娘XDDDD

疫情期間梅花座,期待疫情過後可以看到口罩下的老闆娘。

Before stepping in, or before Google tells you, looking at the name of the store and the environment, it is hard to think that it is a pho specialty store.
The store is built in, and there is a small garden outside. The whole floor-to-ceiling windows create an effect comparable to a western restaurant. If you eat by the window at night, you can see the windows projecting the spiral staircase in the store, and it feels quite comfortable.
This time, we ordered the signature Beef Pho, Signature Chicken Pho, Shrimp Raw Spring Rolls.
In the signature Beef Hor Fun (NTD 400), the parts that I can confirm are raw beef, beef tendon slices, beef balls, beef tendon, beef whip, and some uncertain parts. Except for the beef tendon, every part is delicious, the beef tendon is soft but not rotten; the raw meat slices are very tender and fresh; the entrance of the beef balls is full of the sweetness of beef, and the taste is great.
Pho itself can't give any negative comments at all. It is moderately soft and hard, and the traditional Pho is also used ((Some Pho stores will have rice noodles == ))
The soup is the part of his private kitchen that gets me the highest score. I am a person who has a swollen tongue after eating the monosodium glutamate, so I usually don't drink too much pho soup. But the soup from his private kitchen, I knew it was okay at the first sip. Fresh and sweet, full of beef flavor, no fish sauce flavor, Tainan beef soup is probably the closest I can think of. There is no way to describe the deliciousness of some things in words, at least for me this soup is like that. The soup of his private kitchen is different from other pho restaurants.
In addition to the broth noodles, raw onions and cooked bean sprouts are worth mentioning. Raw onion makes the soup more fresh and sweet, but when it is served with noodles, it is a bit spicy, so I accidentally played XD; cooked bean sprouts are the opposite. Although they lack a crispy texture, they will taste the same as noodle soup. ((Please give the cooked bean sprouts a round of applause)).
The signature Chicken Hor Fun (NTD 400), I only ate three bites of this bowl, which is also an amazing three bites.
In the first bite, the soup is completely different from the beef pho, using chicken broth. There are many pho restaurants outside, no matter what kind of meat they are, they all have the same soup, but the chicken pho from his private kitchen obviously uses chicken soup, which is also delicious. For Mr. Zhuang, it is difficult to distinguish between cows and chickens; for me, beef wins slightly.
In the second bite, the chicken is tender but not firewood. It has a light taste and is very light. I think it is quite suitable with the elegant chicken soup.
The third bite, pho, originally thought it would taste exactly the same as beef pho, but the chicken pho absorbs the chicken soup, and the taste is completely different. For this part, I think the effect of the chicken pho greatly overwhelming the entrance of the beef pho is the same as The feeling that it brings.
Shrimp raw spring rolls (NTD 100), the sauce is basic fish sauce lemon juice. In addition to rice noodles, shrimp, and carrots, the raw spring rolls are also wrapped with basil leaves. The taste is very good, the rice paper will not be too dry, and the taste of perilla leaves slightly overtakes the protagonist. People who like perilla leaves may find it delicious. I personally hope that the perilla leaves will leave my spring rolls XD
After a long talk, the conclusion is that it is delicious and can be eaten with money. Pho 400 seems to be expensive, but 500 beef noodles are also eaten. The content of this environment is definitely worth 400. And the lady boss(?) is very upright, has a nice voice, lively and polite. If the villagers feel that the CP of Pho is not high enough, they can add XDDDD, the proprietress
