唯一不能理解的就是老闆為何不設桌號及劃菜單的方式?即使主食要劃菜單,但煮好後全靠老闆娘大吼問乾麵誰的?米粉湯誰的?如果同時有三桌客人點乾麵或米粉湯,先舉手老闆娘就給,邏輯真的很怪?

餛飩麵湯頭不再濃郁、小菜貴森森,最嚴重的是更換點菜模式:夾菜、劃單、排序沒人說明引導……現場一片混亂,劃好單、站了20分鐘,還沒看到麵(還好是老顧客,闆娘發現後,直接插隊,命兒子先煮我的麵……)

★ ★ ★ ★ ★ 經由朋友介紹後專程造訪的這一家,位在文山區萬芳醫院附近的興德市場的巷弄內,是頗受在地人支持的在地名店,這次造訪後覺得果然有其特別之處。
我覺得這一家一個有趣的特色是頗有意思的營業時間及其所供應的餐點種類。大多數的店家要嘛一早開則著重於提供早餐至中餐,要嘛午間才開始營業並兼做晚間生意,這一家卻是從一早七點即開始營業至午後休息然後於傍晚再度開業供應晚餐,這種早晚兼做的營業時間似乎比較少見;此外,這一家似乎會在早晚兼做的營業時間提供「早晚都有」的餐點種類,所以造訪者或有機會在早餐時段吃到一般來說比較會在晚餐時段吃到的東西。
這次於一早七點店家開門時即抵達,一進店門立刻發現的是一大鍋滷物,包括滷豬腳、豬皮、豆乾、大腸等等,放眼全北市要在一早七點吃到「這一味」的確頗特殊;此外,店家另外主打的米粉湯和一些黑白切豬料等則是比較常見的早點。因為對「這一味」及頗受推薦的整體料理口味感到期待,所以我一口氣點了幾樣滷物包括滷豬腳、豆乾、豆皮、大腸等,另外多點了兩樣黑白切包括嘴邊肉和豬肺,最後不可免俗地來碗米粉湯,結論: 整體滋味不錯,黑白切和米粉湯(尤其是湯頭)較優,滷味則還好。這一家的滷物的滋味本身嚐得到中藥的調味,算是比較平實的滷味,而滷豬腳和豬皮口感有些太過紮實,比較不是那種軟爛或軟嫩的路線,我個人比較不愛,但或許這是店家刻意選擇的口感路線,相信應該也有不少人喜歡,另外的豆乾和大腸也都是平實的滋味;黑白切的豬料嚐得出質好新鮮,可惜這一家和三重的游記一樣,太早去品項比較有限(太晚去也是),抵達時只有嘴邊肉和豬肺可選,有點可惜,另外相較於游記的黑白切是現切現煮,這一家的黑白切是先燙好放置,等到要供餐時才再處理,單就這點而言我認為游記勝出,但無論如何,只要豬料質好新鮮就會有一定高程度的美味;最後的米粉湯大概是這次造訪最有記憶點的,主因是其用豬大骨熬製的湯頭,那是呈現米黃色的米粉湯頭,滋味濃郁,店家還另添加了油蔥調味,讓湯頭口味又更重了,我個人覺得或許可以不需要放油蔥,讓食客可以直接品到豬大骨湯的香氣。
最後一定要提的是這一家竟然在早餐時段會有龍蝦可吃 (老闆還得意地請我過去拍 ?),就如同前頭所述,因為這一家是早晚兼做的餐廳,所以食客會有機會吃到那種比較像是應該在晚餐吃的東西,我個人是有些難以想像一早吃米粉湯黑白切再配個龍蝦的概念,但來這一家,早餐時段不但有滷豬腳還有龍蝦可吃,食客如果有意將早餐做成一個盛筵這需求應該可以被很大程度的滿足。
若剛好路過文山區興德市場可以考慮一訪,尤其適合想在早餐大吃一頓的人。

This time I arrived when the store opened at 7 am. Side meat and pork lungs, and finally a bowl of rice noodle soup is inevitable. Conclusion: The overall taste is good, black and white cut and rice noodle soup (especially the soup) are better, and the lo-mei is not bad. The taste of the stew in this shop can be tasted by Chinese medicine. It is a relatively plain stew, while the taste of stewed pork feet and pig skin is a bit too solid, not the kind of soft or tender route. I personally don't like it. , But perhaps this is the taste route deliberately chosen by the store. I believe that many people like it. In addition, dried beancurd and large intestine are also plain. The black and white pork feed tastes good and fresh. It is a pity that this restaurant and Sanchong Like the travel notes, the items are limited when you go too early (also too late). When you arrive, only mouth meat and pig lungs are available. It's a pity. In addition, compared to the travel notes, the black and white cuts are freshly cooked. Black and white cuts are blanched and placed first, and then processed when the meal is about to be served. In this regard, I think Travels wins, but in any case, as long as the pork is fresh and fresh, it will have a high degree of deliciousness; the last rice noodles The soup is probably the most memorable part of this visit. The main reason is the soup made from pork bones. It is a beige rice noodle soup with a rich flavor. The store also added scallions to flavor the soup to make the soup more flavorful. Now, I personally think that maybe you don’t need to put oil onions, so that diners can taste the aroma of pork bone soup directly.
The last thing I must mention is that this restaurant actually has lobsters to eat during breakfast (the boss also proudly invited me to take pictures ?), as mentioned above, because this restaurant is both morning and evening, so diners will have the opportunity I eat something that is more like I should eat for dinner. Personally, I can’t imagine the concept of eating rice noodle soup with black and white sliced lobster in the morning. But when I come to this restaurant, there are not only braised pork feet but also lobster for breakfast. If diners intend to make breakfast into a feast, this demand should be met to a large extent.
