#乾烙韭菜盒 #文山 在去恆光街 #泰越小吃 時,無意間看見這個位於店面內的小攤──猜想應該是分租店內一隅,架上火爐就能營生了──賣著韭菜盒。 吸引我的是乾烙二字,小時候在家吃韭菜盒都是乾烙的,而且家中還沒有平底鍋,老爸都是用炒菜鍋很費工的轉來轉去在一口氣乾烙好幾個。他想自己吃頓韭菜盒配碗小米粥,是個頗為費事的。但我一直都認為韭菜盒和蔥油餅就是這樣乾烙的,他帶我去的北方館子也都是如此操作的。直到後來看到許多推車賣這類東西,才都是採用一鍋油炸的方式。 這個口味的小東西講究的除了內餡調味之外,就是慢火乾烙了。看到這樣的方式,那怎樣都得買個試試口味。覺得這攤的口味就是個家常,餅皮的韌性和筋道頗為一般,內餡稍微鹹了些,韭菜的味道不知是否是節令的問題,感覺香(臭)氣不夠。左近的人吃個當作塞牙縫的點心是OK的,以我對這類北方麵食的記憶來說,那就是另外一回事了。 時代的推移使得許多傳統作法跟著技術的方便與提升有所轉變和更新,這些年見到有些人對口味的挑剔或堅持,願意採用比較費事耗時的旧作法去追求某種原味。精緻化的過程就如同後殖民主時代般,都要歷經過殖民時期與帝國主義時期。 更多食記位於南河雜(音,祖)俎粉絲頁或社團。

What attracts me is the word dry branding. When I was young, I used dry branding when eating leek boxes at home, and there was no pan at home. My dad used a wok to turn around and dry branding several in one go. He wants to eat a box of leeks with a bowl of millet porridge, which is quite troublesome. But I always thought that leek boxes and scallion pancakes were baked in this way, and the northern restaurants he took me to do so. Until later, I saw that many carts sold these kinds of things, and they all adopted the one-pot frying method. In addition to the flavoring of the stuffing, the little thing of this flavor is just slow-fire and dry. Seeing such a way, you have to buy one to try the taste. I think the taste of this stall is homely. The toughness and chewiness of the crust are quite average. The filling is slightly salty. I don't know if the taste of the leeks is a seasonal issue, and I feel that the aroma (smelly) is not enough. It’s okay for people in the neighborhood to eat a snack that is stuffed between their teeth. From my memory of this kind of northern food, that’s another matter. With the passage of time, many traditional practices have been changed and updated with the convenience and improvement of technology. In recent years, some people have seen picky or insistence on taste and are willing to adopt the more time-consuming and time-consuming old practices to pursue a certain original flavor. 口感屬於乾爽型的韭菜盒子! 但其實豆腐捲才是我的最愛~ 可惜夏天不賣 老闆說保存不易容易壞 所以冬季限定的口味!!
