《孤獨的美食家王醫師--市場日式料理》 連續假期結束,意味著進行美食之旅時,不再需要與洶湧的人潮以及蜿蜒的隊伍奮戰,選擇也會比較多。所以,把目標鎖定在基隆仁愛市場二樓的美食街後,一路上內心充斥著期待的喜悅。 只是,當我以雀躍的步伐抵達目的地時,赫然發現輕忽了連續假日期間觀光客以及在地老百姓的食量。許多知名的攤位或者店鋪高掛免戰牌,想來就算不是因為連假期間忙得頭暈目暗,也有可能是因為庫存被吃光了。這樣的窘境比客滿時吃閉門羹還糟糕。 幸好,雖然幾個主要目標休息,仁愛市場二樓還是相當熱鬧,仔細尋找,應該還是可以找到滿足味蕾的好味道。於是跟著從家裡就巧遇的巨乳眼鏡美艷人妻進行地毯式搜索。之前讚不絕口的黑白切...客滿,生魚飯...不喜歡先捏好飯糰再擺魚片上去的方式....。鍋燒麵和牛肉麵...看起來好吃,但是天氣太熱不想要湯麵......。 就在經過某個轉角口的攤位時,被冰櫃中的一抹紅影吸引了視線。仔細一看,是兩片白裡透紅的鮮嫩魚肉,還帶有夕照般美麗色彩的魚皮,重點是魚皮已經用熱水「湯霜」過。接下來看到冰櫃上的白鐵圓盤上的魚頭,原來是金目鯛呢!孤獨的美食家有個小堅持,倘若看到生魚片只有御三家--鮪魚、旗魚和鮭魚的,通常會刻意跳過。這一天仁愛市場的店家大部分都是如此,所以看到不一樣的魚貨難免眼睛為之一亮。 就決定這一家吧!雖然過去對這裡沒什麼印象,但看起還是眼下最好的選擇。事實證明這個決定是對的,因為沒多久,就開始出現排隊的人潮了。為了避免錯失良機,立刻點了金目鯛魚頭煮付け(醬煮),果然我們一下手,另一半的魚頭也立刻被點走,真是好險! 先上來的是細切軟絲刺身,肉質鮮甜,而且搭配鮭魚卵和海苔粉的調味方式相當有趣,雖然兩旁的生菜有點多餘,去掉會讓擺盤更簡潔,也有幾條沒完整斷開,但是整體而言瑕不掩瑜。接著是重頭戲之一的金目鯛湯霜造握壽司,師傅在捏好壽司後還以噴槍炙燒,堪稱「湯燒雙造」。在為這四貫美麗的壽司留下遺照,喔不,倩影時,巨乳眼鏡美艷人妻將長條瓷盤捧到胸口,嫵媚地問:「需要我開幾顆扣子嗎?(來函照登)」照理說孤獨的美食家應該要接受如此美好的提議,但是坐在板前(料理檯前),還是應該讓視線居高臨下的師傅專心施展廚藝才對,所以也只能帶著幾許愴然予以婉拒。 言歸正傳,將金目鯛握壽司送入口,細細咀嚼,才明白經過兩種處理的目的,「湯霜」是為了軟化魚皮,「燒霜」則是為了讓皮下脂肪受熱融化,而且帶有炙燒後的香氣。這時,醬煮魚頭也已經完成上桌,原本潔白的魚肉染上一層晶瑩的琥珀色,味甜鹹適中的醬汁和煮到半融化的魚皮以及軟組織薈萃出美妙的口感,如果不是最近在控制澱粉,還真希望來碗白飯。很快地,在其他客人豔羨的目光下,我們完食了難得的珍品。聽師傅說這是台灣外海捕獲的金目鯛,雖然脂肪豐厚度不及日本品,但是有特別的海藻風味,也難怪店家不惜工本地進貨。 在享用了比目魚鰭邊肉和整尾穴子魚的握壽司後,很意外地點了鮪魚,因為這是師傅自信的熟成長鬚鮪。適當的鐵質風味帶一點酸,確實經過適當的熟成。之前也曾遇過刻意推薦「御三家」的師傅,這次也一樣沒讓孤獨的美食家失望。後來才知道「晟壽司」今年才開幕,很快地就成為仁愛市場美食街的排隊名店。聽說還有道招牌菜「明太子豬血糕」,雖然不是道地日本菜色,如果有緣,會再找機會試試。 #孤獨的美食家王醫師 #巨乳眼鏡美艷人妻 #基隆仁愛市場二樓 #晟壽司

滿不錯的一家壽司店 雖然店面不大 但是吧台式的用餐方式 讓人感覺很像日本路邊小吃 擺盤跟料理都算是蠻精緻的 餐點整理看起來很舒服 味噌湯真的好喝 非常的甘甜 鮮鮭魚的甜味很明顯 喝完一碗都還想再加點 壽司的部分也蠻不錯的 生魚的色澤看起來很新鮮 吃下口也沒什麼腥味 最令我驚訝的是明太子豬血糕 豬血糕口感非常Q彈 上面擠上了明太子醬 並且灑上了一些碎堅果 吃下去的口感既Q彈又綿密 明太子醬也很香濃 這道明太子豬血糕真心推薦 總結 算是蠻不錯的壽司店 但是對於平常都吃平價迴轉壽司的我 稍微覺得價錢有點高 雖然好吃歸好吃 不過只會偶爾肚子不太餓的時候去享用 肚子餓的時候就不會列入在名單內 不過還是給予五星好評!!
