Their version has a mixture of cuts. Just a few pieces of meat, the rest are intestines of some sort. The noodles are bouncy and chewy. Nice with some pieces of carrots that were cut in a ln elegant way. Added a natural sweetness to the broth. The staff is friendly. Worth a visit if you're in the area.
