小時候造訪過的老店, 搬遷至斜對面的新店面乾淨明亮,用餐起來舒適多了。 招牌的烏醋乾麵小碗就份量十足, 白色油麵條、大量豆芽菜與烏醋,再自行加入店家特調的辣椒醬油膏更開胃, 不過吃完嘴巴都會乾乾的,可能口味比較重的緣故。 赤肉湯也相當大碗又料多,不過肉片本來口感普普, 整體是吃粗飽的小吃,仍算是平常果腹的好選擇。

幾年前和計程車司機閒聊哪裡有好吃的麵時而得知的三重大胖烏醋麵,設立於1968年,其原先的店位在現址的路口對面,原先店的用餐環境非常的「庶民」,地上經常會看到溼漉,然在五個月前搬到現址後用餐環境大幅提升。這次是幾年來第一次再訪,感想和之前一樣:大胖的烏醋乾麵是我心目中大台北第一的烏醋麵。 這次再訪發現和以前不一樣的是以前店家經常會先將麵煮好後放在平台上客人一點就可直接拿取,這次則是點了之後再開始煮,但當然可能是過往都在人潮洶湧的中午造訪而這次一早即到訪所以店家程序有異;另一個差別是這次發現麵的湯水似乎比較多。但無論如何,這次所點的烏醋麵,一端上來除了湯水較多外(大概是我看過最濕的「乾」麵),麵體顏色也偏淡,看不太出來烏醋的痕跡,湯湯水水加上麵體偏白,乍看之下似會是食而無味的烏醋麵,心裡正在嘀咕大胖是不是走味的當下吃了第一口麵後,所有疑慮一掃而空,如果要說吃過的烏醋麵有哪一個的烏醋味就是那麼「剛好」,那就是這個了。這碗麵的烏醋味嚐起來有點微酸但是是那種清秀的、絕對不會造成困擾的微酸,但其他的部份包含烏醋本身的香和濃則在舌尖充分湧現,一碗烏醋麵調味調成這樣,真的可以只吃麵,什麼其他配料都不需要了(店家有加一點豆芽);除了滋味極佳,大胖烏醋麵的口感也很不錯,偏粗的麵體有嚼勁,一上桌之後沒有立刻吃(相機先吃)也因足夠的湯水而不會乾黏成一團,過了一陣子再吃之後的麵體也因為吸了更多湯汁而口感更滑順飽滿,只能說,大胖烏醋乾麵這麼的湯水,和相機先行的飲食模式還真是絕配 ? 這次除了烏醋麵之外另點了以往每次來都會點的骨仔肉湯,並第一次點了幾樣黑白切(豬心和豬皮)來嚐。這次吃的骨肉湯似乎比印象中難吃了不少(可能和個人飲食經驗有關),和烏醋麵的優秀一放在一起更是差了好幾個層次,大胖的骨肉湯的豬料豬味較重,湯頭有些濁而偏油,主要優點大概只有料多。骨肉湯差強人意,黑白切則是更糟,這次吃完大胖的黑白切的心得就是點錯了。雖然大胖的黑白切也是現點現煮,但一端上來那豬皮和豬心口感過硬,就個人經驗還沒吃過口感如此差的豬皮和豬心,滋味也普通,感受不到新鮮豬料的風味,整體而言令人失望。 總的來說大胖我主要推薦心目中的大台北最佳烏醋麵(4星的唯一理由),骨肉湯就普普,黑白切則是還有更好得多的其他選擇而不建議。

I visited at noon and this time I visited early in the morning, so the procedures of the store are different; another difference is that this time I found that there is more soup in the noodles. But in any case, the black vinegar noodles ordered this time, in addition to the more soup (probably the wettest "dry" noodles I have ever seen), the color of the noodles is also light, and the traces of black vinegar are not obvious. The soup and the water on the top are white. At first glance, it seems to be tasteless black vinegar noodles. I was wondering if the fat was out of taste. After taking the first bite of noodles, all my doubts were swept away. If there is any black vinegar noodles that I have eaten that is so "just right", this is it. The black vinegar taste of this bowl of noodles tastes a little sour, but it is the kind of delicate and mild acidity that will definitely not cause trouble, but the other parts, including the fragrance and richness of black vinegar itself, fully emerge on the tip of the tongue. The vinegar noodles are seasoned so that you can really only eat noodles without any other ingredients (the store adds a little bean sprouts); in addition to the excellent taste, the taste of the big fat black vinegar noodles is also very good, with a thick surface. It is chewy, and I didn’t eat it immediately after it was served (the camera ate it first), and because there was enough soup, it didn’t stick to a lump. After a while, the noodles tasted better because they absorbed more soup. It's smooth and full, I can only say that the soup like the big fat black vinegar dry noodles is really a perfect match with the camera-first diet mode ? This time, in addition to the black vinegar noodles, I ordered the bone broth that I always ordered every time I came here, and for the first time I ordered a few black and white cuts (pig heart and pig skin) to try. The bone broth that I ate this time seems to be a lot more unpalatable than the impression (may be related to my personal dietary experience), and it is several levels worse than the excellent one with black vinegar noodles. The fat pig with bone broth The taste is heavy, the soup is a bit cloudy and oily, and the main advantage is probably only a lot of ingredients. Bone broth is not satisfactory, black and white cuts are even worse, this time after eating the big fat black and white cuts, the experience is wrong. Although the big fat black and white cuts are also cooked to order, the pig skin and pig heart on one end have an excellent taste. In my personal experience, I have never eaten pig skin and pig heart with such a bad taste. The taste is also ordinary, and I can't feel fresh pig. The flavor of the ingredients was disappointing overall. Overall, I mainly recommend the best black vinegar noodles in Taipei (the only reason for 4 stars).

在地平價美食,麵可以不吃,但是湯一定要來一碗;現場僅接受現金支付。 烏醋麵:調味一般,滋味偏薄,吃起來平淡,沒特別記憶點,麵條口感過軟不Q滑,但還不到爛,整體對個人評價中偏下;如果覺得味道不夠可以到醬料區自行添加烏醋,或者試試添加蒜蓉辣椒醬油,會有另外一番風味。 綜合湯:湯頭好喝,滿滿的配料,算是今天意外的驚喜!湯頭白濁,外觀不佳但富有香氣,可以看到店家加了許多薑絲去臊增味,入口會先嚐到淡淡的調味再帶出溫暖甘醇的肉鮮味,豬肉味十足,豬腸、豬肝、豬皮也都處理得不錯,吃起來相當軟嫩,不會過老或有異味;對肉食者而言非常棒的一碗湯,但對不喜歡的人可能會覺得過臊。 蒜頭辣椒醬油:各種辣度的沾醬自取,味道鹹香甘甜帶點辣,百搭各種配料,一定要試試。

very traditional and delicious noodles with reasonable pricing. you can easily find that many local citizen, salary men and taxi driver come here to have their lunch. but the environment is not very clean, that is the only points that i think it should be improved well.
