炸蛋餅可以粗分成兩種流派:中溫浸油炸,以及大火酥膨炸。前者像炸鹽酥雞,後者像炸雙胞胎。這家店則是後者的作法。這種作法麵的本身是關鍵,才能炸到酥不過頭而有軟心,咬勁十足而不油膩。這家雖然外皮炸得夠膨,但內心不夠恰到好處,嚼勁自然也不合格,還有點吸油,重點是三星蔥一點也不三星。而且反正都吸油了,還不如吃一般泡油炸的那種,好吃的成功率比較高。
