不會臭的魚露 之前因為做拉麵鹽醬第一次接觸到魚露這種調味料。但泰國、越南的魚露用小魚製成有明顯的臭味,除了泰式料理之外很難用在其他料理。還好當時有人推薦這家才搞定。 可能因為用的是肉較多的鯖魚,加上這裏的天然落菌菌種不同,不論魚露本身還是現場環境的氣味都和印象中的魚露臭味連結不起來。雖然還是常常幫水溝來的臭味背黑鍋被檢舉稽查,但很多事情是得進到釀造現場眼見為憑,打開蓋子聞聞才會真相大白。 第三代的老闆非常健談,透露了許多知名店家或品牌都是他們的用戶。但比起營業用常用的第三到第五等級魚露,這次直接試了很多人表示分不出差異的頂級和第二級。實際上頂級款和二級款的差異就是第一道原汁和第二道原汁的差異。雖然頂級的價格(200元/500 mL)硬生生比第二級(100元/500 mL)高了一倍,但是頂級款入口之後有較飽滿的鮮甜,比起二級的鹹鮮微苦我覺得論C/P值是頂級款更為出色的。
