同意評價太低,不夠客觀。
從小吃到大,很確定麵皮與口味都沒變過。
老姜的麵皮Q彈,才不是什麼冷凍包子可以蒸出來的口感。
愚自認為小籠包跟湯包著重的關鍵不一樣,湯包往往以肥油肉汁與餡料飽滿即能取勝,然小籠包則不在肉餡多寡,而是麵皮。蔥與肉能不能和諧搭配,使肉餡油脂融合蔥香,以襯托麵皮。在咬下瞬間享受包子香氣與Q彈時,再迅速咀嚼補上內餡,給予味蕾第二個層次結合一齊滿足五臟廟。
