The skill in Hakka cuisine lies in the ability to cook food thoroughly without hardening it, and to naturally bring out the umami taste of the food. The dish shown here is Mi Tai Mu (米苔目), which consist of a special broken noodle stir fried with onion, ginger, minced pork, dried shrimp and a savory soy-based sauce. #yummy ?
