2021年12月評價3星:今天好像重新開幕,可能是換老闆,因為店內裝潢、桌椅沒什麼改變,上次來吃川味牛肉麵湯頭味道很夠,也屬於較辣的口感,刀削麵也比較Q彈有嚼勁,但今天可能是客人太多,刀削麵軟爛,湯頭沒什麼味道,還好牛肉厚又嫩,算好吃,今天中午現場等了約30分鐘,湯碗使用不鏽鋼碗,這點很棒,不是內耐皿塑料碗,川味牛肉刀削麵一碗140元,年輕老闆娘有給加湯,如果下次刀削麵跟湯頭能進步,我會重新給予更好的評價。 2021年3月評價4星: 牛肉刀削麵湯頭還不錯,湯頭偏辣,牛肉大塊夠厚,較為硬一點較有口感,用餐環境寬敞乾淨,可以加湯,但不知道可不可以加麵?炸醬麵料也蠻多的,口味也在水準之上,整體還算不錯,使用不鏽鋼碗,不鏽鋼餐具,很不錯,裝熱湯比較健康安全,不過餐點單價偏高一點

今天到平鎮有事, 正好碰上這家刀削麵重新開張, 詢問後才知道, 原來的老闆找不到接手的人, 本打算退休不再營業, 偏偏現在接手的年輕人剛剛退伍, 本身對餐飲又很有興趣, 就拜師學藝, 經過一陣的薰陶後, 青出於藍, 做得不比原來的老闆差, 我也當場點了一碗清燉牛肉麵試試. 麵一端上來, 單單不鏽鋼的麵碗, 直徑就有20公分大, 滿滿的一碗麵加上六塊分量相當的牛肉塊, 先聞一下湯頭的香氣, 相當的不錯, 再喝一口湯頭, 一喝就知道是牛大骨熬出來的湯頭, 不鹹略帶一點醬香, 牛肉一口咬下去, 燉得剛好, 用的是紐西蘭草飼牛肉, 削得適當的麵條, 嚼勁夠, 顯然在揉麵的力道上是用了心的. 因為他們目前沒有炸醬來配刀削麵, 就這一點還有進步的空間, 因為炸醬刀削麵, 才是刀削麵真正的靈魂, 跟老闆聊了一下, 他們打算夏天時才推出炸醬麵, 因為剛剛開門, 先將牛肉麵這一塊做穩了, 才會推出炸醬麵. 現場整體相當的乾淨, 當然也試了兩份小菜, 不錯的口味, 對我這個很挑剔的客人來說, 我可以給到80分. 我的評論是: 價格公道, 份量十足, CP值很高, 很適合年輕的學生及上班族來用餐, 他們的水準如果能夠保持不變的話, 相信生意一定會蒸蒸日上. 祝福這位願意傳承手藝的年輕人, 加油! 2021/12/06
