應算是台中爌肉飯名店之一的陳明統爌肉飯也是2021年米其林必比登推薦的小吃,這次專程造訪,感想是不負其聲名。 相較於彰化的爌肉飯幾以豬腿肉相關部位為主,台中的爌肉飯似還有三層肉的選擇,這次造訪陳明統所點其招牌爌肉飯即為三層肉版本。這碗爌肉飯對我來說幾乎找不到值得嫌棄之處,爌肉飯兩大組成(爌肉和飯)之一的米飯部份口感極軟,明顯可知是有用心烹煮的米飯,然後那爌肉又更厲害,取自質好溫體豬的豬肉以獨門手法既醃又滷出這個吃起來無論是鹹或甜的程度好像就是那麼「剛好」的爌肉,然後香氣也足,口感一樣也是很剛好,瘦肉不柴而有嚼勁、肥的部份軟到幾乎即化、皮則是Q彈帶些韌而有嚼勁但也不會太過,實在是令人喜愛的爌肉!最後覆蓋在爌肉底下的飯也有充分的肉汁透入,吃起來一點也不用擔心單吃米飯會太過單調。整體而言陳明統的爌肉飯我給五星。喔對了,很多人在吃爌肉飯時流行加酸菜,不得不說陳明統的隨人自取的酸菜表現也是可圈可點,夾取一些和爌肉飯一起入口又是另一番美好風味,不過我個人覺得那樣的整體口味路線會有點像鐵路便當?,反而無法單純地表現陳明統這碗爌肉飯的優異之處,我建議酸菜部份加一點吃個味道即可,要好好品味這碗爌肉飯的厲害還是以「原味」為主。 這次另點了苦瓜湯和白菜滷,都不錯,尤以苦瓜湯較特出,但好吃程度和爌肉飯比有層次上的落差,這不是因為它們不行而是因為爌肉飯表現太特出。苦瓜湯的湯頭呈現些許琥珀色,最大特色是裡頭裝了完整苦瓜,吃的時候連瓜裡頭的子都吃得到,整碗湯和料的滋味不苦,我認為連怕苦瓜苦的人都可以一試,吃起來整體帶甘,還不錯。最後白菜滷的部份滋味和我一般吃的似乎不太一樣,基底調味沒有柴魚也不含其它配料,吃起來就像是在吃白菜而已,滋味雖比較陽春,但和一大塊帶肥爌肉搭配著吃也不錯。 總體而言非常推薦,有機會造訪台中可考慮一訪。
