20211225 2訪了 之前訪友不小心吃到 口味真心不錯 服務也蠻不錯的 不過工作人員數量看起來不多 所以尖峰時段用餐的話 需要一些包容 停車的部份 如果門口都停滿的話 可以在門口這條成功路上 面對店門口的左邊去找 基本上都會有 往右邊 7-11 的方向我個人認為真的不好找 --- 白鍋我沒吃就不多做評論 紅鍋口味我個人非常喜歡 他家的是更接近四川口味的 有別於市面上的那些麻辣鍋 我個人覺得屌打那些連鎖的大店 重油,我忘了油水比例是多少了 辣味也很夠,滾越久越辣 覺得不夠辣都還可以再加辣 老闆感覺蠻大方的 要加辣講一下就好 每次都是一大坨下去 看起來就非常爽 XD 醬料區有東西沒有了也是 不會只補一點點 感覺非常好 食材也算還不錯 丸子很好吃 XD 紅糖茲粑蠻推薦的 外酥內軟 紅糖也不死甜 我個人不愛吃甜食的 也很喜歡這道 相較之下 椒麻酥肉就顯得較為普通 手工肉丸 老闆娘自己做的 下鍋前看起來不緊實 煮了很久再撈起來還是不緊實 XD 口味是蠻不錯的 明顯可以吃到花椒 是會想要再點的 重慶酸辣粉 這個跟其它家的做法都不一樣 它是直接拿乾的粉條來 我們自己在籃子裡面把它煮好之後 店內工作人員會幫忙調配醬汁 再把它變成一碗酸辣粉 醬汁的醬料是使用醬料區的醬料 然後再加入我們在吃的麻辣鍋紅湯 最後可能是再到廚房去加醋 口味上跟其它家差蠻多的 感覺上面的油少很多 酸度頗高 是還蠻有特色的 算是中上 --- 然後我講一下菜單中間下面的水煮魚跟酸菜魚 這個是要預訂的 直接去的話是吃不到的 有點神奇的是看評論跟照片 好像都沒人講啊 所以我們就上了 XD 我們去吃的是酸菜魚 預訂的時候一切正常 但當天到現場的時候非常錯愕 因為我們以為酸菜魚是一道菜 結果送來才發現它竟然是鍋 XD 直接打亂了我們吃鍋的計劃… 但沒事 後來經過我們努力的消滅了四分之三的酸菜魚以後 我們直接把它變成鴛鴦鍋 拼上麻辣鍋 XD 這酸菜魚的口味也是都可以照需求調整的 所以愛吃酸辣的朋友也是可以先講一下 預訂的時候老闆娘有跟我說目前用的是鱸魚 看是不是能接受 上菜以後酸菜魚看起來就是正常的白湯鍋底 因為不知道可以調整味道 所以都是預設的口味 (小酸小辣) 不過它看起來清淡 其實沒有 主體除了鱸魚以外 還放了非常非常多的泡椒 花椒也少不了 然後還有像是山東大白菜、豆腐之類的配菜 單這鍋 就算不加點別的東西其實也是算夠吃了 當然,不夠吃也可以加點其它配菜進來煮 湯頭喝起來微酸 辣度感覺得到,但很舒服 沒吃很辣的人建議辣度不用調整 吃了覺得有需要再調整就好 酸度對我來說太低 所以之後如果還有吃酸菜魚的話 我會考慮酸酸酸 XD 酸菜魚吃起來整體感受頗佳 會是想要再點的 --- 最後我講一下覺得可惜的地方 就是紅鍋的鍋底 鴨血跟豆腐 我不知道正四川那邊的鍋底長得如何 但他家的豆腐跟青菜豆腐湯的豆腐吃起來區別不大 放在其它鍋裡面,我都不會覺得不搭 但是放在麻辣鍋裡面 是真心覺得太弱了 鴨血其實也就好一點 跟豆腐一樣 入味程度極低 算是我吃過的麻辣鍋裡面 最弱的鍋底了 他家東西大部份都讓我覺得優秀 就這鴨血跟豆腐讓我覺得太尷尬…
