麵線粗細不一,是手工麵線,但是湯頭完全沒有香味,鹹味,甜味,直到把素排骨酥拌勻,才有一點點鹹香味,湯是清水下去煮的(還真的住清水用清水煮),就算是素食的,也要熬湯頭。 素食麵線糊差葷食差在大骨熬湯和柴魚或一些特殊食材,素食的湯頭你可以去看書來做也不難,湯頭商品可以去買一些賣相不佳的NG蔬菜來熬,甘蔗頭,高麗菜心,黃豆芽,香菇頭,玉米,及一些菜類,一般是用小文火熬湯,現代的器具比較發達,可以善用悶燒,悶好了以後,再上快速爐小火個3分鐘,香味就出來了。 這一碗裡面只有吃到一隻香菇絲和兩隻木耳絲,五六隻紅蘿蔔絲,蘇肉羹0.3公分小塊2~3個(是蛋奶素),再加上素排骨酥,沒了,麵線偏少,這樣的量商品成本不到10元,賣大碗45元,老實說有點過份,麵線量應該再加10%~15%會比較剛好,至於香菇可以去新社的菇場買NG的破乾香菇來用,本身去菇寮看一次商品,後續都有宅配可以使用。 一般做吃的,製造成本約落在35%~55%之間(願意下重本超過55%的不多),貴店以20%以下的成本做出目前的品質,是在是很難有回頭客,僅供參考。
