湯頭濃不死鹹,牛肉夠軟,沒到很軟爛的程度,環境差了些,好幾十年的座椅讓人印象深刻。價位便宜,但湯底都有一些沉澱物,有點奇怪,由於環境和湯底…考慮後調降評價給3.5星。

最喜歡的紅燒牛肉麵店沒有之一,這是我在彰化唸書的牛肉麵味道,過了十多年依然這麼美味動人,就算不餓只要來彰化就想來一碗牛肉湯麵配上一盤超好吃的滷味,湯好喝,肉好吃,麵條滑溜軟Q,滷味更是不可錯過,當然還不能忘記桌上那盆超好吃酸菜,美味就是這麼簡單又滿足,希望老闆一直開下去,生意興隆

【正宗紅燒牛肉麵】 下午到「黃慶宗皮膚科診所」看病 看完診後肚子超餓的 就在附近騎著機車尋找美食 在彰化市長安街發現這家牛肉麵店 我還第一次進來吃 想吃看看到底有多正宗 老闆說已經開店30多年了 牛肉麵大碗和小碗只差20元 當然就選大碗的吃個飽 湯頭超濃郁的 味道偏鹹不會辣 喜歡吃辣的可以跟老闆要辣油 桌上有一桶酸菜一定要加 可以讓整個湯頭更加分 因為物價上漲11月全面調漲 牛肉麵大碗的100元小碗的80元 不過還是很便宜相當經濟實惠啦~ 老闆說湯頭都是純天然食材熬煮 多吃有益健康 再請店家隨便幫我切50元小菜 就吃得心滿意足 據說店家的雜醬麵也是一絕 下次再來吃看看 ?彰化市長安街61號 (華南銀行後方) ⏰上午10:00-晚上9:30 《週四店休》 ☎️(04)7250961

正宗紅燒原汁牛肉麵做法在這裡!食譜簡單又正宗-小吃大學問系列 牛肉麵是台灣最具代表性的麵食,一碗裡頭從紅燒湯頭到紅燒牛肉做法都極為講究。雖然大街小巷都有牛肉麵店,可是要做出真正受歡迎的好味道並不容易,且讓阿芳老師為大家示範,如何用最省工的手法做出正宗、最讓饕客回味無窮的紅燒牛肉麵。根據美食家舒國志等人考證,所謂「川味牛肉麵」是國民政府遷台後,匯聚了五湖四海的中菜手法與食材所創出的道地台灣味。一般來說牛肉麵分為紅燒湯與清燉兩大類,以紅燒湯較為常見,然而真正講究的紅燒牛肉麵其實並非「一鍋到底」,而是分成一鍋紅燒牛肉原湯,一鍋牛大骨白湯,兩種湯兌在一起才會味道剛剛好。 近年來許多店家為了省工怕麻煩,往往會直接稀釋紅燒牛肉湯,為了怕風味不足又在湯底中添加許多中藥材滷包或蔬果,結果讓牛肉麵風味變調,且因紅燒醬汁不夠濃稠,導致滷出來的牛肉味道不足。紅燒牛肉麵作法與材料不見得要很複雜,但各項基本要素缺一不可,才是廣受大眾歡迎的正宗台式牛肉麵風味。既然牛肉麵的白湯不可或缺,那店家自己熬牛骨湯如何?阿芳老師表示,牛大骨的熬煮並不簡單,不僅常會有將牛骨湯熬臭的風險,使用牛晶粉直接調製出基礎白湯不但可避免風險、更可保證湯頭品質穩定。在紅燒原湯方面,不論採用滷牛腩或牛腱肉,重點是不可以滷太久,大約30分鐘即可,然後用餘溫慢慢把滷汁的味道泡到肉裡,如此既可入味又可保持肉的咬勁。完整認識原汁紅燒牛肉麵製程 牛腩條或牛腱心切塊汆燙洗淨,以油炒香薑片、豆瓣醬、甜麵醬後放入牛肉塊一起炒,再下醬油膏炒勻後放入香料包、水及米酒,放入切半的洋蔥、整顆蕃茄及大塊蘿蔔,一起滷30分鐘後熄火浸泡一晚。 隔天去除洋蔥、蕃茄、蘿蔔,重新加熱紅燒牛肉,即可呈現濃稠油亮的感覺。 以滾水加入牛晶粉兌出牛肉清湯,放入麵碗中約至5分滿。 放入煮好的麵條與青菜,然後淋上紅燒原湯,放上牛肉、撒上蔥花即可。
