我們常說要”做自己”與”愛自己”,但實際上能”如心”的人有幾位。今天很有收穫的是,經由朋友的介紹來到了彰化的”恕”咖啡。 今天其實是一個輕鬆的行程,老房子裝潢成咖啡店也經常見到,但恕咖啡的老闆清華先生給我更多不一樣的感受。他在這個空間與他所提供的食物裡挹注了他對人生的態度與創意,除了讓我們一行人有非常大的味蕾感受外,也真實啟發了自己。 清華老闆是一個笑咪咪的人,在menu上他不堅持菜單與單點咖啡的老路,而是入場後多種咖啡品嘗~你可以同時品嘗到各種溫度、各種形式、裝在各種容器的黑咖啡,而且每種咖啡香氣都不同,有些可能微酸、有些可能微苦,有些清涼有些熱,唯一相同的是每種滋味都滑順入喉,滿足了我對咖啡的想像。 在接觸恕咖啡之前,我其實是個咖啡白癡,印象中的咖啡是既苦或酸,貴一點就星巴克,便宜一點就便利店吧! 而且沒加奶真心難喝,因此我一向愛茶甚於咖啡。但昨天過後我感覺到原來咖啡如同好茶,也能擁有清新流暢的味覺體驗,原來新鮮的咖啡豆如同茶葉,透過各種沖調方式依樣展現各種面貌。現在才發現並不是咖啡本身難喝,而是我一直將寶特瓶綠茶當成標準,才會誤判了咖啡的面貌。 清華老闆的無菜單料理(需預訂且有身分限制)也是我很重要的啟發。知道我們一行人從新竹來,特地挑了嘉義才有的”拉仔麵”,仔細做成冰鎮口感加上新鮮紫蘇葉,雖然沒有肉但讓人一口就驚豔不已。他的招牌玉子燒外層塗上新鮮茴香cream cheese再以奶油、吐司簡單煎烤後,成為一道外熱內冷、入口即化的小品,讓我們久久難以忘懷。最讓人驚奇的是他的飯後甜品,以手工愛玉搭配萬壽菊葉,以及一個增加口感的秘密糖,成了一個既簡單但口感又爆棚的佳作。作為一個經常煮食的主婦,我真心佩服他的創意。 一個從極年輕時就知道自己想幹嘛、勇於學習與創業的年輕人,願意在年輕時就進入產業學習,並為了理想不斷的努力。就算很困難,他也是會咬牙慢慢做起來。在他身上沒有急於賺大錢的念想,而是看到了溫和、學習、謙虛的內涵,在我邁入40歲,什麼都漸趨保守的時候,他的人生給我很好的啟發。謝謝帶我去這裡的姊姊,讓我找到思考的藍圖。

On the menu, he does not insist on the old way of menu and single-order coffee, but tastes a variety of coffee after entering the venue~ You can taste black coffee of various temperatures, various forms, and various containers at the same time. , and the aroma of each coffee is different, some may be slightly sour, some may be slightly bitter, some are cool and some are hot, the only thing that is the same is that each taste is smooth and smooth, which satisfies my imagination of coffee. Before I came into contact with Shu coffee, I was actually a coffee idiot. I remembered that coffee was either bitter or sour. If it was more expensive, it would be Starbucks, and if it was cheaper, it would be a convenience store! And it’s really hard to drink without milk, so I always love tea more than coffee. . But after yesterday, I feel that coffee is like good tea, and it can also have a fresh and smooth taste experience. It turns out that fresh coffee beans are like tea leaves, and they show various appearances through various brewing methods. Only now did I realize that it was not the coffee itself that was unpleasant to drink, but that I had always regarded the bottle of green tea as a standard, and that I misjudged the appearance of coffee. Tsinghua's boss's no-menu cuisine (reservation required and status restrictions) is also an important inspiration for me. Knowing that our group came from Hsinchu, we specially picked the "Lazai Noodles" only available in Chiayi, and carefully made it into an iced taste with fresh basil leaves. Although there is no meat, it is amazing. His signature tamagoyaki is coated with fresh fennel cream cheese on the outer layer, and then simply fried with cream and toast. It becomes a small dish that is hot on the outside and cold on the inside and melts in the mouth, which we will never forget for a long time. The most surprising thing is that his dessert after dinner, with handmade Aiyu with marigold leaves, and a secret sugar to enhance the taste, has become a simple but delicious masterpiece. As a housewife who often cooks, I really admire his creativity. A young man who knows what he wants to do from a very young age and has the courage to learn and start a business is willing to enter the industry to study at a young age and work hard for his ideals. Even if it is difficult, he will grit his teeth and do it slowly. In him, there is no rush to make a lot of money, but the connotation of gentleness, learning, and humility. When I entered my 40s and everything became conservative, his life gave me a good inspiration. Thank you to my sister who brought me here and gave me a blueprint for my thinking.
