★ ★ ★ ★ ★ 涼麵是一種食物的組合方式，是以油麵、醬油、麻醬及小黃瓜等配料組合而成的食物，在台灣宵夜及早餐店頗負盛名。部分涼麵專賣店的涼麵也是以微溫的方式上菜以確保麻醬遇熱散發香氣部分早餐店將涼麵的組合以炒麵的方式呈現，研發出了炒涼麵更是名震一時。其餘非涼麵組合方式的麵皆稱為冷麵。在嘉義，因地理位置處在北回歸線上，涼麵的麵條採寛扁的麵條，在醬料方面，除了有芝麻醬之外，還會添加美乃滋（嘉義人稱之為「白醋」），並佐以小黃瓜、紫色高麗菜、玉米、紅蘿蔔等涼菜，最後再配上含有決明子配方的麥茶，風味上佳。

★ ★ ★ ★ ★ 微甜的店家自製醬油膏加上些許麻醬與自製白醬，讓涼麵猶如白醬義大利麵般的口感，不同外面一般涼麵有些只有過度噁心的麻醬味。搭配店家免費的無糖麥茶，一口涼麵一口麥茶真的很有夏天的fu。
