10/20有幸參與府城盛事 錦霞樓 日芳珍饌 阿勇家聯名的盛宴,由 王瑞瑤的超級美食家 所提供特別保留的中廣聽友桌,遂撰文以誌。 而日芳珍饌的食材之新鮮,叫人瞪目結舌;連我這海鮮過敏的人,都可以輕易享用任何一道菜餚。 在此羅列以下幾道特別突出叫人讚嘆的菜色內容: 細工慢活龍膽班 本人身邊的朋友都知道,我對海鮮甚是恐懼; 尤其非常的害怕清蒸的魚類以及魚皮, 但是這道細工慢火龍膽班上桌的時候清香四溢, 我不由不得嚥了一下口水。 青蔥如絲、皮脂如膠、肉如細雪、汁如醇酒, 一如白雪壓蔥嶺;亦如空青照雪山,光滑豔翠。 實在是受不了誘惑,輕嚐了一口;口齒留香、滿腹芬芳, 完全沒有魚類的任何腥味,反而帶有一點海洋的馨香,這滋味實在是奇妙。 而我甚害怕的魚皮,吃起來甘甜黏稠又帶有彈性; 反覆咀嚼之後唇齒之間膠質沾黏,是一股淡淡的香氣而非腥氣。 魚肉雪白細嫩,每塊肉質皆飽滿有彈性; 搭配翠綠爽口的蔥絲,佐以老酒醇髎般的鮮美湯汁。 海中之鮮味莫過於此。 蘭蚌櫻蝦映帶子 剛端上桌便被那干貝大如拳的氣勢給震驚,這該是2L甚至更高規格的生食級帶子; 加上高品質的蘭花蚌與干貝三絕醬之櫻蝦干貝醬快炒後,呈現一種奢豪的面貌出現在餐桌上進行次壓軸的獻禮, 現場可謂掀起了一陣又一陣的驚呼。 而日芳珍饌的干貝跟蘭花蚌品質之好另人瞪目結舌, 台灣人好食干貝;故而大家對干貝的品質那是一吃就知道, 坊間也有許多賣干貝的,但品質參差不齊。 最常見的就是你買來的時候是花枝丸這麼大,你退完冰之後變成貢丸這麼大; 你煮完後變成鱈魚丸這麼大,你吃進嘴裡後剩下mm巧克這麼大。 但日芳的干貝不是,他快炒完後還保有近乎2L的大小; 可見他的含冰量含水量相當的少,而且品質極好。 咬下去彈牙清甜,搭配著三絕之一的櫻蝦絕醬; 海味在舌尖味蕾喉頭處蔓延開來,大海獨有的鹹香鮮味彷彿在味覺上演奏一曲【碧海潮生共明月,龍女啣驪驚波瀾】 。 這滋味極端美妙,本人在此回想的同時口水已經快要滴下來。 好加在!伴手禮就是這干貝三絕醬!哈哈 而蘭花蚌其實跟北極貝是同一項食材, 蘭花蚌是種雙殼貝類,原產於加拿大紐芬蘭以北的冰冷海域; 因為聯鴻貿易公司老闆娘發現這項產品除了顏色漂亮, 展開之後形狀也很像台灣蝴蝶蘭,所以命名為蘭花蚌。 (此四段文字出處;日芳牌) 也許是因為產地環境夠純淨,新鮮的北寄貝吃起來肉質之豐腴; 嚼勁之驚人,味道之鮮美讓我這個海鮮懼怕者,甚至對蚌殼類有著嚴重過敏的人大啖數塊後絲毫沒有任何不適。 這品質實在太好,不得不讓人多美言幾句。 千里飄香佛跳牆 佛跳牆之由來相信眾人皆有所耳聞,在此便不再贅述; 近年來冷凍菜餚之盛行,造就很多佛撞牆在市面上販售與流通, 聞者怵目驚心、食者淚濕衣袖。 本人就吃過很多佛撞牆! 可謂七八塊芋頭外,兩三朵香菇淺; 就是爛店社林邊,待轉溪橋忽見-七百元! 辛棄疾都要變成心氣極! 混濁的湯汁,兩三塊排骨;七八塊爛芋頭,兩三朵破香菇。 我絕對不會說那個什麼假七哇冷凍佛撞牆太可怕,就連佛也要撞破南牆! 這一道佛跳牆當壓軸,想來必是阿勇家的拿手絕招; 眾所皆知熱炒外燴辦桌菜中佛跳牆是經典中的經典,能不能拿的出手就看一這道。 其中日芳的食材實在新鮮,品質又好; 故而調製出來的佛跳牆恐怕真的是連佛也要聞香而來了,實在是香聞四方遍上下。 我看在座諸位各個成了香積佛國土的居士了,大開朵頤之下; 下筷迅如雷、疾如風;持杓如舀光,湯汁簡直瀲灩不可直視。 香菇、花膠、腳蹄筋、豬腳、猴頭菇、干貝、蝦棗、排骨等等.. 既名曰佛跳牆,這一罈簡直勘比佛國八寶功德池之琳瑯滿目,件件精細、道道不凡。
