位在台南大灣的《三王廟阿婆麵》,對蟲來說就是這樣的存在哦~
一口麵吃得到肉燥的脂香與調料的鹹香滋味,說不上很有層次,但就搭配得一絕~
在他們還在三王廟的時期,差不多是蟲國小的時候,所以應該是差不多西元2000年左右吧~
那時候蟲媽就經常帶我去這邊吃飯,因為廟周邊就是個小市場,因此好吃的也是不少,
例如《三王廟肉粿》、《素食麵攤》跟本文介紹的《三王廟阿婆麵》,算是我們最常吃的幾攤了,
而店名之所以叫三王廟,應該是因為原本他們是在大灣三王廟旁邊的麵攤,原本也沒有店名,
因此到了新店址後,索性就以原址的名稱來命名,
在阿婆走了之後,子嗣們把好味道給傳承下來,並移到現在新址,
纖細的白麵條煮得軟硬適中、嚼起來有一點點Q度,但也軟得可以稍加咀嚼就吞下,
麵條跟調料、肉燥拌在一起後,油亮油亮的光看就讓人流口水,
一口麵吃得到肉燥的脂香、調料的鹹香滋味,以及麻醬的芝麻香,很有層次,又搭配得一絕~
因此蟲在說可以「一口直接吃到碗見底沒問題」還真不是玩笑話,
事實上蟲小時候還真的是這樣吃麵的,一、兩口就直接吃到底、吃到底,
邊吸麵邊吞下肚,說實在是傷胃又不好看,但實在是因為太好吃啦~
滷味也是吃麵必點的精隨,
特別是豬皮、海帶,我想他們家的豬皮,是讓養成我每回吃陽春麵,都會切上一份豬皮的習慣~
豬皮滷得膠質滿滿、鹹香Q彈;海帶也是脆脆的那種、鹹度適中,口感都非常好,
(上面照片中沒有豬皮是因為 ... 那次來吃的時候賣完了...)
浮水魚羹也不錯,太晚來經常就賣完吃不到了,
他們家向來不是以價格 & 份量取勝,所以對比一般的麵店,可能會有小夥伴覺得偏小貴或份量偏少,
但對蟲來說,價格對得起味道就好了~~
說實話,蟲個人覺得口味上跟以前阿婆有一點點的不同,可能是多了對小時候記憶的懷念與惆悵吧,總感覺還少了點什麼、變了什麼,
比較精確來說,依蟲覺得是麵條的粗細有點變化、變得比以前來得細上一點點點,真的就只有一點點,
然後調味上應該是味精、鹽巴的使用少了一點,不像以前那麼的鹹了,當然以前也沒有很鹹,就是很夠味這樣~
總歸來說,天下無不散的筵席,傳承十來年的味道要不斷維持下去也很有難度,這點也是得感謝後人願意傳承吶,
就味道來說仍然是相當好吃,也是蟲回台南有機會的話,都要跑回大灣吃上一碗麵的好滋味~

When they were still in the Temple of the Three Kings, it was almost when the Chongguo primary school, so it should be around 2000~
At that time, Chong Ma often took me to eat here, because there is a small market around the temple, so there are a lot of delicious foods.
For example, "Three Kings Temple Meat Cakes", "Vegetarian Noodle Stalls" and the "Three Kings Temple Apo Noodles" introduced in this article are some of the stalls we eat most often.
And the name of the shop is called Three Kings Temple, because they were originally a noodle stall next to the Three Kings Temple in Dawan, and they didn’t originally have the name of the shop.
Therefore, after arriving at the new location, I simply named it after the original location.
After the grandma left, the heirs passed on the good taste and moved to the new location.
The slender white noodles are cooked moderately hard and have a little Q of chewing, but they are also soft enough to be swallowed with a little chewing.
After the noodles are mixed with the seasoning and minced pork, the greasy look makes people drooling.
One bite of noodles gives you the fatty aroma of minced pork, the salty taste of the seasoning, and the sesame aroma of sesame sauce. It is very layered and perfectly matched~
So it’s not a joke that the insects say that "you can eat the bowl directly with one bite to the bottom."
In fact, when Chong was a child, he really ate noodles like this. One or two bites were eaten to the end.
Swallowing noodles while swallowing it, it’s really hurting and unsightly, but it’s because it’s so delicious~
Lo Mei is also a must for noodles.
Especially pig skin and kelp. I think their pig skin is to make me a habit of cutting a portion of pig skin every time I eat Yangchun noodles~
The pork rind is full of gelatin and salty flavor; the kelp is also the kind of crunchy, moderately salty, and the taste is very good.
(There is no pig skin in the photo above because... it was sold out when I came to eat that time...)
Floating fish soup is also good. It is often sold out when it comes too late.
Their family has not always won by price and portion, so compared to the average noodle shop, there may be small partners who think it is too small and expensive or the portion is too small.
But for insects, the price is worth the taste~~
To be honest, Chong personally feels that the taste is a little bit different from the old grandmother, maybe because of the nostalgia and melancholy of childhood memories, I always feel that something is missing or changed.
To be more precise, Yichong felt that the thickness of the noodles had changed a little, becoming a little bit thinner than before, and really only a little bit.
Then the seasoning should use less MSG and salt, not as salty as before. Of course, it was not very salty before, but it was very flavorful~
All in all, the banquets in the world are endless, and it is very difficult to continue to maintain the taste of the past ten years. This is also thanks to the future generations who are willing to pass on.
As far as the taste is concerned, it is still quite delicious. If the insects have a chance to return to Tainan, they will have to go back to Dawan to eat a bowl of noodles~

滷味必點海帶,豆干,豬皮,?耳朵,滷蛋。小時候不敢吃白肉,但是這裡的?皮香Q有嚼勁,很快就賣完,其他地方的豬皮我就不敢吃了。
?麻醬乾麵的麵條口感特別,別的地方都沒相似的!肉燥是滷滷味的湯汁,所以特別有味道,麻醬的味道是提味的,不是濃郁濃厚的類型。
有點麵都會附上一碗清湯,湯頭用大骨下去熬煮,讓人一直回味,喝光光
辣油很提香,不是刺激性的那種,我覺得是後座力比較強,必加?
烏醋也很特別,聞起來也不刺激
滷味的醬油也是自製的
淡淡的不死鹹
現在是下一代在經營,雖然口味有點退步,但是回憶的味道都還在!?
