選擇其實沒有很多,單就菜刀而言,就是一款不同規格。 倒是有賣很多不同的鐵器。 有在接受磨刀喔。

多年以後,又再度造訪鳳山有名的打鐵街,信興打鐵店;他在三民路44巷,兩間店互為鄰居,老老闆看起來就是有打刀師父的一身正氣,年輕老闆磨刀的時候展現出熟稔的磨刀功力! 磨刀的工法,與屏東三中鐵店不同: 信興的磨刀工序:粗石輪(1300rpm)>砂布輪(1300rpm)>磨刀石(#400 & #800)>磨刀石(#1000);沒有用青土封口! 順便科普一下,青土封口的用意是為了拋光,不是為了封住毛細孔! 今天買了五把持銀,回故鄉給家人使用! 還意外的發現了馬蹄鐵,真正釘在馬蹄上的馬蹄鐵,老老闆不願意割愛,要不可以成為收藏品! 店裡面有很多寶貝可以淘,也有真正在打鐵用鍛爐、鐵砧、鍛造槌,隨處都可展現鐵匠的精神及歷練! 我一定還會再找時間過來學習打鐵知識,麼高的技巧只能靠自己,但是打鐵的知識一定需要不斷地完善,分享給各位有興趣磨刀的朋友,如果本評論也激起你的刀魂,歡迎留言互相討教!

想買西餐去骨刀、削皮刀、主廚刀。看好了米國阿嬤粽網站賣的米國製 Old Hickory 1095 高碳鋼系列。 但想說支持一下國貨、在地產業,先買把台灣製的削皮刀來用用看,好用再全買齊。 店家說沒有高碳鋼的削皮刀。本來還想訂做一支 Bird and Trout, 但店家沒空理我。 重點是因為店家懶得理我,所以當時根本沒說要幾支。 訂製刀國內外都有。花蓮銅門刀那幾家就都物美價廉有禮貌。 要規定至少幾支、價錢在其他地方也都可以談,但在這裡,店家的態度就是免談。 難怪山中銅門長,鬧市鳳山消。 結果就是敗了阿嬤粽的 Old Hickory 去骨刀來魔改。比這些大頭家好參詳多了。 看到有人號稱新刀被磨成瑕疵品。業主說沒看到人拿刀回去理論。 那件事不干我事,但我看到現場還有影片裡店家用的磨刀石中間是凹進去的。是不知道要修正磨刀石?是另類蛤刃?還是功夫好到可以徒手配合修正磨刀石的曲線?
