以老闆認為的最佳四兩重麵條及黃金比例醬汁為主軸,並以此為店名。 麵的種類簡單,底是一樣的,再依據個人喜愛區分為原味、麻醬、麻辣、榨菜和扁食。 湯麵款則多了豬腳和鮮肉冬粉。 沒有大小碗之分,完全可以理解,太小搭醬汁也許偏鹹;太大又會顯的味淡,我曾貪食加麵,反而領會走味,偏大的麵鹹淡容易失控;麵條亦容易出糊,一碗碗的吃反而味道恰好。 這次點了榨菜肉絲乾拌麵、黑豬扁食湯和滷菜,拉開四方桌一場盛宴。 榨菜、燙青菜和醬汁都在碗底,趁著熱拌,入口偏淡,但別急,過熱或過冷都會讓舌尖味感遲鈍,均勻的混合後再放放,溫度漸漸冷卻,直至味蕾最敏感之際,麵條澱粉收縮,會將醬汁包裹上麵條,一切便開始鮮明綻放。 拌面本身不是特別野的油蔥或濃豬油的氣息,更沒有肉燥的壓境。麵條煮的非常好?,夾點麵心,不硬生不爛口,油蔥、豬油、醬油都是溫和耐人尋味的適口,更偏向外省的醬汁拌麵款,再細細一品,榨菜沒有過度泡水,保留鹹口的脆酸感,輔佐的肉絲很難得居然不老,有肉香、嫩度和甜味,完全可以感受到老闆非常認真煮好一碗麵的心意。 滷味沒燙過,簡單切盤,淋上香油、蔥,少了尋見的醬油膏,更襯我心,該嫩、該彈牙原香你品的出,我認為對食材有信心的店家,就會將醬料的比例拉低,讓顧客真正吃食的本質,當然個人還是喜歡加上店家煉的油潑辣油,將香氣再提升一階。 黑豬扁食湯是今晚的最驚豔。個人不愛大餛飩,就愛珍秀一口扁食,小小的一顆,天地乾坤功力皆在一口之內,這家扁食完全是我的菜。 熱燙入口,鮮明的甜味強而有力的竄出,那種甜不是味精壓底的僵硬甜,而是肉產生的肉甜味,每嚼一口就疊一層,甜鮮不絕於嘴。皮在舌尖上像手觸撫的絲綢般柔滑,不夾生;不過爛。湯也是熬的鮮美夠味,提點胡椒,襯的肉湯更香厚,好吃極了。 立馬再加點3份扁食放入原湯,嚇得老闆說:「3份!!!18顆欸!」哈哈~但根據長年以來用餐,因為消瘦,店家怕浪費,總遭遇各種擋菜法的我來說,根本不是問題,我是真的喜歡,才會願意多吃,堅定的口氣和想吃的堅持總能感動他們,而且我確實也不會浪費,保證吃完!最後笑著跟老闆說你這四兩麵,我用四份扁食致敬。 老闆超細心對待每一碗麵,即使人潮漸多,手腳也不慌,就這麼好好的一碗碗煮,他的心中有堅持,你坐著吃麵都能感受到,那份心意,熨燙了內心疲勞的紋路。 每個人都有一碗最喜歡的乾拌麵,我認為一碗用心呵護的款待,不用山珍海味,亦能感動人心,好吃不過尋味小吃。 四兩乾拌麵地址:高雄市鳳山區五甲二路239號。 營業時間:11:00-20:30(休假日不定,公布在FB、IG)。
