一耕食堂位在距離台東市區需要一個多小時才能到達的長濱,有著預約制Amis無菜單醃漬料理。固定每人500元,依照人數決定餐點份量,基本上會提供7道料理,搭配阿美族代表的各種醃漬物、海味、湯品,是只有來到長濱才能享受到的獨特風味。其中Amis最重要的醃漬菜「fukah(酸筍)」「silaw(醃生豬肉)」「anato(醃魚)」,考量到食材的原味並不是每一個人都可以接受的「鹹、辣、酸、腥」,融合當令食材提升菜色味道,讓客人可以享受到好吃的食物又可以體驗吃Amis傳統醃漬料理。而且當主廚在出菜時,同時也會詳細介紹食材的運用方式。 第一道菜是眾所期待的「炙燒silaw壽司」,silaw是取豬背部肉,在宰豬之後、必須趕在蒼蠅來之前迅速處理完將生肉醃漬,是Amis的重要儀式。炙燒過的醃生豬肉,Q彈的長濱米與肉的鹹香恰到好處。 第二道是「清燙油菜佐anato」,anato指醃魚料理,醃漬飛魚卵搭配蒜頭、橄欖油炒過,作為油菜的淋醬,鮮香氣味獨特迷人成就了超下飯料理。 第三道是「fukah涼拌透抽」,透抽的軟嫩搭配上醃筍的漬酸與番茄的果酸,讓人口水直流,雖然是涼拌菜但是澆汁也讓我多吃了兩碗白飯。 第四道是「烤肉」,原以為看起來會很柴的肉,吃起來卻是帶有脆度,搭配上檸檬、洋蔥與少許的胡椒,令人十分滿足。主廚說Amis喜歡烤肉相聚的感覺,我也很喜歡烤肉相聚的感覺,比圍爐更有相聚的感覺。 最後的三道菜有月光螺、飛魚乾野菜湯、蔬菜煎餅,再以布丁塔做結尾。蔬菜煎餅外層爽脆,內層鬆軟,即使在燙也能一口一口地塞進嘴裡享受。飛魚野菜湯的飛魚乾的鮮味徹底融入在湯裡,讓人不禁將湯一掃而空。或許那種與山與海很近的美好味道,只有親自來一趟才能嘗到。

Basically, it will provide 7 dishes, with various pickles, seafood, and soups represented by the Amis. It is a unique flavor that can only be enjoyed when you come to Nagahama. Among them, Amis’s most important pickled dishes are "fukah (sour bamboo shoots)", "silaw (salted raw pork)" and "anato (salted fish)". Taking into account the original taste of the ingredients, not everyone can accept the "salty, spicy, sour, Fishy" combines the seasonal ingredients to enhance the taste of the dishes, so that guests can enjoy delicious food and experience the traditional pickled dishes of Amis. And when the chef is serving the dishes, he will also introduce in detail how the ingredients are used. The first dish is the "grilled silaw sushi" that everyone expects. The silaw is to take pork back meat. After the pig is slaughtered, the raw meat must be marinated quickly before the flies come. This is an important ceremony of Amis. The grilled marinated raw pork, the Q-bomb longhama rice and the salty aroma of the meat are just right. The second course is "Boiled rapeseed with anato". Anato refers to a marinated fish dish. The pickled flying fish roe is fried with garlic and olive oil. It is used as the sauce for the rapeseed. The unique and charming smell makes it a super meal. The third course is "fukah cold sour sauce". The softness of the sour sauce is matched with the pickled bamboo shoots and the fruit acid of the tomato, which makes the population drain. Although it is a cold dish, the watering also made me eat two more bowls of rice. . The fourth course is "barbecue". The meat that I thought would look very woody, but it tastes crispy. It is very satisfying with lemon, onion and a little pepper. The chef said that Amis likes the feeling of barbecue gathering, and I also like the feeling of barbecue gathering, which is more of a gathering feeling than an irori. The last three dishes are moonlight snails, dried flying fish and wild vegetable soup, vegetable pancakes, and end with a pudding tower. 阿美族無菜單料理,本次用餐$600/人,老闆娘櫃檯兼廚師,但不影響服務品質與出菜速度,雖然不是每道都合胃口但醃製料理很特別,還是會推薦有來到台東能來品嚐看看!

老闆用阿美族傳統的食材(洗烙、扶尬、阿那度沾醬)在味道上稍作變化,變成能符合大眾口味的料理,期待能成為大家對於阿美族傳統料理的入門。每一道菜上菜時老闆都會做說明,讓大家了解每道菜的由來或創作理念。這次吃下來每一道菜也都非常好吃,跟長濱這邊許多無菜單料理店比較起來,一耕不僅好吃,又多了一份原住民的風味,老闆也很親切,是下次來長濱時會想再回訪的口袋名單之一。但有時候如果一個禮拜左右前還無人預約老闆就會店休(整間店只有老闆一個人負責),想吃的朋友記得要早點預約XD

Totally loved this little place. Food uniquely aboriginal. Explanation from friendly/cute waitress made each bite more appreciative and tasty. Only wish aboriginal wine pairing is available.
