激勵軒 其實已經來訪很多次,雞白湯、鴨湯、沾麵品項都有品嚐過,激勵軒給我的感覺,不外乎就是家常味,相較於狸匠體系的其他店家,激勵軒的口感跟風味,我覺得更適合初嚐的客人們,有親切感,應該也是因為就在家裡外頭。 外觀是在沒有騎樓的店家之中,飲料店的旁邊,店外停車大概只能容納4~5台機車?,可以去對面便當店騎樓停車(沒有營業的話),再走斑馬線過來即可。 店內座位比較擁擠,隨身物品也沒有放置的地方。 不過店內的裝潢明亮,吃飯的時候滿舒服的,冷氣溫度也剛好,不會到冷到不行。 6/10不知道何時多加了女生店員,增加了餐點的速度,應該還是剛來的。 這次點的是 六月限定番 味噌瑪薩拉 $240 麵條:硬 是多種香料的組合體,屬於印度風味??,有丁香、肉桂、薑黃、茴香等,期待吃起來的口感如同印度咖哩一樣,個人也是喜歡吃重口味? 配料:雞叉燒四塊、海苔、蔥花、豆芽菜、溏心蛋半顆、切達起司,豆芽菜的配置有點像二郎系的感覺,滿有趣的,店家也很有誠意。 湯頭:濃濃的南洋風味,剎那間,我以為我在吃的是咖哩飯和唐揚雞。湯如其名,裏頭的肉桂和茴香風味充斥著湯的風味,意外的是,還有加上起司?️!起司的延展拉伸了湯頭的辣、鹹,在嘴巴中也能品嘗到起司的甜鹹味,整體很加分,也更有在吃咖喱飯的錯覺。湯頭發揮了很多作用,不吃重口味的或許也可以嘗試看看,出店以後,也不會覺得嘴巴乾澀,喉頭不會過鹹,感覺湯頭加了奶製品(牛奶和起司)增添了滑順跟溫柔。 麵條:偏硬,吸湯能力很好,吃麵的時候帶上來的湯頭香氣,直逼嘴裡。 湯頭加上辣油,重口味的感受又提升了一些,辣居然也被湯頭融化,有點像是加了辣椒的咖喱,更像印度那裡的口味。 溏心蛋:貍匠特有的白酒釀蛋,被湯頭的南洋風格沖刷,有點口味上的小碰撞,兩者互不相容,但也各走各的。 海苔:不是片狀,而是撕碎狀的,在湯頭跟麵條中,切斷了橋樑,增添了足夠的風味,建議先配著吃,容易軟化掉,就不好吃了。 叉燒:招牌舒肥雞肉,一樣軟嫩有水準。 溏心蛋:招牌白酒香氣的蛋。 整體風格:會再訪再訪很多次的店家,好吃CP值也夠。 這次限定番的感受,就像是在吃咖喱飯一樣,湯頭附著在叉燒上,起司撫過雞肉,變成很嫩的唐揚雞感。 湯頭也不過油膩和混濁,吃完胃口還是很舒服。

文長,先說結論: 不用排隊時,才會考慮的拉麵店。 點了這碗名字很難記的拉麵,價格260。 入座後大概又等了20分鐘,等到左方兩位過號的客戶麵都上了,我的麵還沒上;我推測是這碗傳奇的拉麵需要較多前置的功法,導致我老婆麵吃完後才上,所以我只能夠將全村的期待都放在這碗疑似很厲害(?)的麵上面。 麵上了之後,拍個照後再喝一口湯…嗯…菜單上寫的湯頭說偏鹹,但喝起來就是口感很雜亂的湯,而且一點都不鹹。過去習慣喝日式味增拉麵偏鹹的湯,跟這個一比…他們家的湯頭:就。很。淡。 一開始有看到幾顆豆鼓,想說得救了,豆鼓的重鹹應該可以稍加救回這碗嚴重調味不足的湯頭,但很不幸的,被過度處理的豆鼓已經喪失了他本來應有的風味,空有外在已經沒有了原來的靈魂…湯喝到底就那樣,沒深度也沒層次,但主要敗筆也是湯不多(因為碗不大)。 配菜是水煮高麗菜,沒調味單靠湯頭的結果就是:平淡無味,與世無爭。 雞肉就舒肥作法,沒炙燒,或是有炙燒但我沒吃到。吃起來最簡單的那種,的確可以中和口感過於複雜的拉麵湯,但記憶點零。 原本想給2顆星,但因為麵中間有一顆炸花枝丸很好吃,所以再加一顆星。 麵吃完後可以免費再續一球,但我寧可到斜對面再吃一碗大的火雞肉飯,也不會再多貪一球免費但不好吃的麵體。 餐廳整體的衛生尚有進步空間,桌面需要客戶自己用抹布清潔頗耐人尋味,每個人的衛生標準不同,在後疫情時代,敢將衛生消毒把關的工作交給客戶,真的需要很大的勇氣。

The tonkotsu ramen broth here is no joke. Very tasty!

Wow! There are some pretty unique chicken broths here. I had a "white" bone soup and it was delicious. The noodles are great too so this place is a must visit for ramen lovers.

We ordered the basic favor, nan tung and nu tung. Yummy~ and it’s really special to have that ramen based from chicken soup. You must try!
