★ ★ ★ ★ ★ It’s my second time to attend the wine dinner co-hosted by Guyot and Penghu Green Hotel Chef Charlie. They matched wine and Penghu fresh seafood into a wonderful symphony. Each course was paired with a different wine, chosen to enhance that course’s specific characteristics.
這是我第二次參加居有酒的餐酒會,一樣由澎湖綠的旅店主廚Charlie設計全新的專屬菜單,料理中幾乎不加鹽,透過改變食物的質地,享受完全來自澎湖的天然海味。
1、
appetizer: 澎湖石鮔章魚,灑上黑糖粉,毫不違和,滋味美妙。
pairing: 法國丶義大利的傳統開胃酒喝法。這次使用法國Pastis茴香酒,加入澳洲Tasmania水源保護區的天然雨幕水。
2、
entree: 南瓜溫潤的甜味+小管(抓上來直接煮熟)的鮮味+澎湖當地烘焙坊做的麵包果乾的酸味,這道湯品單獨呈現,不搭酒。
3、
entree:以奶油輕煎的白帶魚櫛瓜捲,配上清香的剝皮辣椒與甜潤的玉米泥,再灑點白胡椒,這是一道豐富多層次的味覺饗宴,讓不愛吃白帶魚的我也吃得津津有味。
pairing: 西班牙白酒

main course: 海瓜子丶鮮蝦,以及Q彈有嚼勁的手工麵疙瘩,我特別喜歡底下鮮美的湯汁。
pairing: 義大利的Lambrusco微甜微氣泡紅酒,這款酒跟海鮮麵疙瘩的味道相得益彰。

This is the second time I have participated in a wine party where I have wine. The new exclusive menu designed by Charlie, the chef of Penghu Green Hotel, is almost without salt. By changing the texture of the food, I can enjoy the natural seafood entirely from Penghu.
1,
appetizer: Penghu Shima octopus, sprinkled with brown sugar powder, does not violate the harmony, the taste is wonderful.
pairing: French and Italian traditional aperitif drinking method. This time I used French Pastis ouzo to add natural rainwater from the Tasmania Water Source Reserve in Australia.
2,
entree: The mild sweetness of pumpkin + the umami of a small tube (cooked directly) + the sourness of dried breadfruit made by a local bakery in Penghu. This soup is presented on its own without wine.
3.
entree: lightly fried white ribbon fish squash rolls, with fragrant peeled chili and sweet corn puree, and sprinkled with white pepper. This is a rich and multi-layered feast for me who do not like white ribbon fish. Also eat with relish.
pairing: Spanish white wine
4.
main course: Sea melon seeds, fresh shrimp, and chewy handmade gnocchi, I especially like the delicious soup underneath.
pairing: Italian Lambrusco lightly sweet and slightly sparkling red wine, this wine complements the taste of seafood gnocchi.

main course: wild sea fish with corn sauce
pairing: real clarification sake (Miyama Nishiki of Japan Sake Association)

dessert: tiramisu
pairing: Muscat sweet white wine

★ ★ ★ ★ ★ A neat little bar located next to the national museum of arts and science. The interiors were impressive and we really enjoyed the ambience. Wine was ok (as we typically like strong, tannic Bordeaux wine) and owner was friendly and polite.

★ ★ ★ ★ ★ First and foremost this is not a French restaurant. If, like me, you got the impression that it is one from the name and the appearance then you will make a mistake. Owner is a nice guy, restaurant is clean and has a nice atmosphere. The overall message is very casual place for drinking some wine. They serve a set menu but it is not printed out and the prices are not discussed. There is no wine menu and the pairings with dinner are at the discretion of the owner...so if you don't mind a serious element of mystery with your dinner then maybe its ok for you. The charge for dinner and wine (4 diff types, pour was not very generous) was @ 1500 / person. Food was nothing special and we expected a bit more as the restaurant scene is heating up here in Taichung fortunately. They have been open for 3 years so obviously many people like the place !
