早在去年就想參觀柿餅的製造過程了❤️❤️❤️ 但是新埔北埔這兩個說近不近說遠不遠的地方 實在讓人有些怠惰 今日正好有事必須來新竹一趟 前一晚便決定把這柿餅觀光納入辦完正事後的清單 才不浪費請一天假啊
新埔附近有不少家柿餅廠 會選中劉家柿餅是因為看評論被店家熱情的態度吸引 所以雖然其他家柿餅廠名氣更大 但今日還是選擇劉家 劉家位在更偏僻的小路裡
因為來的今天已是柿餅末季 也沒有太大量的柿餅美照可拍 但還好我多問了一些對柿餅製造過程好奇之處 老闆也很樂意分享 並沒有因此就隨便打發我 以下就是我的柿餅流水帳日記 以免之後又忘記啦~~
柿餅的產期從每年約中秋過後陸續有「牛心柿」、「石柿」、「筆柿」依序成熟 其中「石柿」是新竹特有的品種
老闆邊介紹柿餅邊給我試吃三種柿餅的差異:
牛心柿最為常見 去年買的番路鄉柿餅也是此品種 印象還不錯;
石柿的「柿子味」最為鮮明;
筆柿外型最容易辨認 不過以新鮮軟柿來說 筆柿的味道個人較無特別喜歡
說著說著 老闆便帶我參觀在烘乾室裡擺在架上的半成品 我來這裡就是想看到這景象啊(尖叫~ 一打開烘乾室就是我最愛的柿餅味 老闆倒是說他聞到沒感覺了 哈哈 半成品部分只剩下筆柿 老闆說想利用這最後一批做不用手捏的柿餅 還拿了一個給我嚐鮮 我明白他說的是什麼 之前去韓國玩的時候也有買了一盒裡面還有濃稠漿汁的柿餅 當時就對此印象特別深刻 原來這種有漿汁的柿餅要在天氣夠冷 且濕度低的環境才能做出 以台灣的氣候條件不太能製成這種柿餅 要另外手工調整環境因子 才能做出類似的東西
另外來這裡才知道還有「柿霜粉」這種東西 柿餅製成後放入冷凍保存 會自然生出柿霜 但此種方法長出的柿霜較不規則 看起來會像是發霉 且生長速度慢、賣相不佳 所以通常會撒上成本不便宜的柿霜粉 一來柿霜可以生長的較均勻 二來時間上可節省不少
老闆也提到柿餅保存應當放「冷凍庫」而非冷藏 放冷藏柿餅顏色會變深 濕軟且會壞掉(難怪之前放冷藏的柿餅表皮都會濕濕的 囧) 正確的放入冷凍庫保存可保存約一年也不壞哦
因為還有其他人來訪 所以還有好幾個問題沒問到 有些遺憾 老闆說今年來晚了 只好明年再見 明年我不會偷懶 會早點來訪的

Therefore, although other persimmon cake factories are more famous, we still choose Liujia today. Liujia is located on a more remote road.
Because today is the end of the persimmon season, there are not too many beautiful photos of persimmons to take, but fortunately, I asked more about the process of making persimmons. Persimmon cake running account diary so as not to forget it later~~
The production period of persimmons starts from about the Mid-Autumn Festival every year, and "beef persimmon", "stone persimmon" and "bi persimmon" mature in sequence. Among them, "stone persimmon" is a unique variety in Hsinchu.
While introducing the persimmons, the boss showed me the differences between the three types of persimmons:
Beef heart persimmons are the most common. The persimmons from Fanlu Township that I bought last year are also of this variety. The impression is not bad;
The "persimmon flavor" of the persimmon is the most distinct;
The appearance of pen persimmons is the easiest to identify, but in terms of fresh soft persimmons, the taste of pen persimmons is not particularly favorite.
After talking about it, the boss showed me the semi-finished products on the shelf in the drying room. I came here because I wanted to see this scene. I don't feel it anymore. Haha, only the semi-finished products are left. The owner said that he wanted to use the last batch of dried persimmons to make non-squeeze dried persimmons. He also took one for me to try. I understand what he said. I also bought a box when I went to Korea to play. The persimmon cake with thick juice inside was particularly impressive at the time. It turned out that this kind of persimmon cake with juice can only be made in an environment where the weather is cold enough and the humidity is low. Taiwan's climatic conditions are not very suitable for making this kind of persimmon cake. It would take another manual tweaking of the environmental factors to make something like
In addition, I came here to know that there is something like "persimmon frost powder". After the persimmon is made and stored in the freezer, it will naturally produce persimmons, but the persimmons grown by this method are irregular and look like moldy and slow growth. , The appearance is not good, so it is usually sprinkled with expensive persimmon frost powder. The persimmon frost can grow more evenly, and it can save a lot of time.
The boss also mentioned that the dried persimmons should be stored in the "freezer" instead of being refrigerated. The color of the dried persimmons will become dark, soft and spoiled (no wonder the skins of the dried persimmons that have been refrigerated before will be wet and embarrassing). If you store them in the freezer correctly, they will last about approx. A year is not bad
Because there are other people visiting, there are still several questions I haven't asked. It's a pity that the boss said that this year is late, so I have to see you next year. Next year, I will not be lazy and will visit earlier.
