現燙牛肉湯 的精華都在湯底,湯清卻很鮮甜 入口時很清香鹹度剛好,後下後會感受到牛肉的甘甜與牛肉香。 搭配薑絲跟肉沾豆瓣醬或是單吃不沾醬都有各自的風味。 牛腩麵真的是驚艷,上層燉煮軟嫩的筋帶點微Q的口感,下方牛腩不會卡牙的軟口,搭配湯的清新更不同。 湯比現燙牛肉湯更清透,因為少了肌紅蛋白透到湯中,所以更透。湯甜度更高。麵體煮的是偏Q,很有口感咬勁。

推薦: 半筋半肉湯、薑絲牛肉、地瓜葉 如果吃不習慣,會嫌棄的點: 湯頭鹹、價錢貴、牛肉量少 如果您平常習慣吃紅燒類牛肉麵,金春發可以直接跳過,這家是清燉的。 ===== 雖然我常吃,也喜歡吃金春發,但若您要大老遠特地跑來吃,我是覺得沒必要刻意跑這一趟。或者,您看到是“百年老店”,就特別期待,那可能心裡跌傷的機率會比一般人還高! 金春發各單項產品都是水準以上,但並非各單項的佼佼者。尤其您若是來這只有點購某單項產品,或是只有來吃一次,您可能馬上會在腦中記憶庫搜尋出另一家,直接把金春發打趴! 金春發最大優勢,是可以在同一家吃到不同的產品。基本上要跟金春發一樣的同質類型店...,有,但不多。大多數的牛肉麵店,沒有熱炒(是熱炒牛肉產品,不是指熱炒店,別搞錯意思);相反地,有熱炒的,對於牛肉麵、牛肉湯...等產品通常都不會很專精。所以,我認為金春發在市場上有很特色的存在。另外,金春發是走“區域性稱霸”,尤其對於附近的上班族、居民來說,不用跑太遠就可以有家厲害的牛肉料理店,超讚的! 金春發算是我蠻常吃的店之一,因為昆陽站的金春發在我公司附近,每個禮拜至少吃一次,如果櫃檯是比較年長的店員(不確定是不是老闆娘),我是已經吃到不用點餐,直接說“一樣”,就可以入座等餐上桌。復北店的金春發離我家也不遠,所以如果家裡小朋友要吃牛肉麵,都會來這裡吃。不過,對復北這家比較好奇的是,2020年開的時候,店是寫“陳春發”,菜單的版型和配色都一樣,但左上角卻也是寫“陳春發”!原本還以為是陳家內部有什麼問題,裡面人要出來自己開一家,結果在2021年,復北店名字又改回“金春發”。

Not a fan of their beef noodle. They offer the stewed version, not the braised. The meat here is fattier than the usual beef noodle joints. I also had the curry beef and it was really a bunch of greens stir fried with a few pieces of beef in a small portion of curry sauce. I wouldn’t go back considering there are so many other beef noodle joints in this city.

Good Taiwanese style beef noodles. Clear broth and many different cuts of beef to choose from. Simple stir fry dishes are also available. Soup sometimes can be over salty, ask for lighter broth if necessary. Service is fast and generally fine. Expect higher prices than most Taiwanese food.

點了半筋半肉牛肉麵,肉超老 If you are craving something similar to Tainan’s famous beef soup or beef noodle soup, this place is not even close… Mediocre taste, poor hospitality, portion not corresponds to the price. I’d probably visit only once.
