常常在台南各店的路易莎遊走喝茶聚會 對這間店該怎麼説呢,與其他店落差有點大 有幾點如果業主看到希望可以想想 1.綠茶紅茶一直處於售完的狀態,但其他店並沒有這狀況,或許是單價太低利潤不夠,不過對於連鎖體系的咖啡廳,消費者還是希望有多點選擇。 2.餐點食物的內餡相較其他店,有點少,這點就見仁見智,倒也不會去算裡面有幾片菜葉,但就是數次的點餐有感覺到份量偏少,希望客人多點餐,那至少東西要有標準之上 3.茶的味道,唉..這點更客觀了,沒有其他店好喝啊,水的問題或是製作程sop的落差? 4.其他店有的活動,如飲料搭配米漢堡有折購,這間店就沒有跟進,不確定是不是每間店的方案不同。 5.配合政府防疫規定很重要,但別忘了這裡是咖啡廳不是疾管局。 最後可以觀察出來這間店的經營者是小家庭或是夫妻,其實環境都維持得不錯,有插座的大桌也方便學生們使用做報告,不過我認為一間好的店與一間普通的店之間的差別是,經營者有沒有不斷的反思反省。 如果今天是自己創設品牌的咖啡廳,那可以有孤芳自賞態度或是挑客人, 但加入了連鎖體系的品牌,那就不能用經營路邊紅茶店的標準去處理事情,店員不能在店內大小聲,不能閒的時候在座位上一邊玩電腦(躲到辦公室可以)或是制服不夠整齊劃一。 相信業主也想長久良好的營運,那就要先面對自身的問題,而不是第一個念頭就是誰錯誰對,今天客人不指出你的問題,因此倒閉了,難道要怪客人沒跟你反應嗎? 建議有機會去其他路易莎分店看看,感受一下差別,為什麼有些店人一直都很多,如果希望客人多點餐,那東西就要好吃好喝待得舒服,這才是這品牌會成長的原因。路易莎是很好的品牌,別可惜了這樣的機會。
