努力了一年以上,終於踏入這裡,彷彿這不是真的?!感覺非常夢幻.... 但面對這碗麵,聞到到入口的味道,全盤出乎我都意料,與冷凍的饗念完全不同!!! 其實很難冷靜客觀的享受這碗麵,隨著每一口湯與麵入口後,慢慢地開始認真感受這碗的與眾不同... 一種新鮮與濃厚的風味交錯在味蕾上,不同的方式衝擊地、溫潤地告訴我,還想繼續吃下一口,甚至捨不得加入我所愛的辣椒,儘管我明白加辣一定更不同,更驚喜的是蘿蔔們的味道與口感,幫著這碗湯頭加分到破表,就這樣不知不覺就吃飽了,哈哈!!
After working hard for more than a year, I finally stepped into this place, as if this is not true? ! It feels so dreamy.... 人生好難,這年頭上至米其林,下至小麵店,都要憑預約制/熟客帶路才有機會品嚐。 小小麵店只有5個位子,每天限量30份牛肉麵。第一次來肯定迷路,「門前隱味」有如都市傳說般隱身在巷子裡的巷子。 入座後奉上一杯熱茶,一碗牛肉麵$225,可以選擇寬或細麵,套餐包括酸菜和豆干。嗜辣者,還會多一小碟番茄辣椒醬。老闆「大叔」會問客人是否有吃飽,雖然不能加湯,但可以加麵,記得保留湯頭給多加點的麵條。今天是開業以來的第1543天,這香濃的老滷湯頭帶點膠質,牛肉和牛筋幾乎入口即化。 本業是設計公司的大叔說2017年一開業就連續兩年賠錢,2019年開始做宅配居然又賠了3百萬,堅持到現在,不但沒有再賠錢,竟然還賺錢。 現在餐飲業要是持續賠錢6個月,就直接關門大吉。大叔的毅力來自一開始眾人的不看好,如今預約已經排到2024年,這是一碗有錢也不一定吃得到的牛肉麵。 我向來對有個性的老闆/主廚充滿好奇,趁機與大叔閒聊了半小時,得知他當初就自行訂立用餐規則,研發以大數據來經營客戶關係,而門前隱味的成功一部分就是要歸功於這票死忠的熟客。 離開前我跟大叔說,這是我喜歡的牛肉麵,希望下次再見。 「這年頭吃飯要靠人品,今天有機會認識,總會再見的。」一路走來始終一人獨撐大局的大叔淡定回覆。 Life is hard. This beef noodle shop is hidden in the alley. First time visitors are likely to get lost. It's a one man shop. The owner does everything himself. Believe it or not this is not even his day job. From the beginning most people thought this business model is doomed to fail. But the urge to prove them wrong kept the owner going. Then he continued to lose more money when he decided to start offering frozen beef noodles online. 1543 days later the business is going strong with reservations made through 2024 and obviously a proven profitable concept. Part of the success is due to a well-planned operation strategies and through and through CRM program, not to mention a group of diehard dedicated loyal customers. I was skeptical at first but after trying it for the first time surprisingly I do like it. The meat was tender and the al dente thick noodles went perfectly with the rich tomato-based broth. Before leaving I thank the owner and told him that I hope to see him again. With his usual poised manner and he said, You're obviously a person with good character. That's why you're invited today. We shall meet again eventually.

6 seats and 30 bowls per day. Reservation only and fully booked YEARS in advance. You can try your luck on the website to see if there are any last minute cancellations but I wouldn’t get your hopes up. And is it good? Yes, one of the finest bowls of beef noodles in the world.

A small food stand of handmade beef noodle hidden in a crowd, busy city like a gem. There are only five to six seats and the shop owner cooks right in front of you. What a show! You can smell the scent of animal fat, watch the smoke of boiling noodles, and finally eat the masterpiece all by yourself. This is life.

Very delicious beef noodle soup! The soup base is cooked in the same pot by adding fresh ingredients. The soup today is day 686, you can taste the rich flavors and the collagen fills your mouth. Beef was very tender, carrot and radish was soft. Noodle was cooked perfectly al dente the way I like. Very hard to make a reservation I was lucky enough to have a friend who made the reservation 7 months ago. The wait may be long but the soup itself is very unique. Looking forward to the next visit to see how the soup have evolved over time. 2nd visit old soup base #907days tastier than ever 3rd visit day 1461 still the same great taste!
