不過燒肉就膩了一點

鴨肉的韌度和嫩度平衡到一個剛好而且不軟爛,雖然口味上對很多人來說我滿肯定會覺得單一偏向稍鹹,但是整體說來基本該有的甜、鹹、香,都發揮得很平衡;皮的部份沒有到爆炸般地香和噴汁,但也是基本的香味吃得出有用心;⠀

叉燒乍看上去,以及剛吃下去如果沒有細細品味的話,也許會產生一種很乾的印象(好吧就算細細品味我覺得應該還是很多人會覺得乾),但我覺得其實它是有表現出最基本的嫩度和咬感的。⠀
口味我覺得獨特的地方是,大部分店家其實表現的比較主要在蜜汁甜味上,而這家雖然剛入口應該會給你偏鹹的感覺,但我覺得是一種,吃得出從鹽味、到鮮甜、再回到鹽味尾韻,有層次的感受。⠀

燒肉的話豬油的味道真的就覺得偏重偏膩了,儘管瘦肉層的鹹香和脆皮的脆度及香味都夠,但還是沒辦法平衡那有點過重的油膩味,有點可惜。⠀
除非是像有些長輩很喜歡吃肥肉的,可能會覺得不錯。⠀

副菜稍油,鹹度倒還好,吃習慣一般便當店的人,可能會給你一種隨便炒、怎麼這裡熟透那裡不太有炒到的感覺。⠀
以我有吃到的洋蔥就頗明顯,可是實話說我自己是喜歡不要那麼熟的洋蔥的脆和辛感,所以看個人。⠀

燒肉是讓我沒有打到4分覺得稍稍可惜的點。⠀
這家其實在我第一次還沒開始寫百家燒臘計劃地去吃遍板橋所有店的過程中,因為他是唯一在地圖上不到三顆星的,所以有點被我給忽略。而去地圖上看評價,其實大部份拉低分數的,第一是不滿於店家態度,第二是環境整潔。⠀

我必須承認,就算早就耳聞過香港小吃店「出了名的服務態度」,實際來到這家給兩位來自香港的老夫妻「服務過」仍然可以打開我新的三觀。⠀

但我想說的是,我個人是非常堅持相信:每家店不論味道、服務,還有他呈現給你的其他所有感受如何——他都有他開店的理念、想呈現給你的東西,以及他決定開店時對自己手藝的信心...等等。⠀
可能這些東西會被他第一時間表現在你面前的不好印象給蓋掉、全盤否定,這也很正常——我覺得大部份的消費者本來就是這樣子,不會注意到自己來到一家店真正想要什麼(雖然通常都自以為是來吃好吃的料理),然後就被一些枝微末節的非重點帶著情緒走。⠀
但我個人的信念是,關於「品味」這件事,儘管可以主觀,但應該是有很多非客觀的東西要被拿掉,你才不會在一個框架上去作出評判,而能真正追求味道本身。⠀
不然,換句話說,全世界都用哀鳳就好了幹嘛要有其他手機存在。⠀
