職人的店。 隱身巷弄的小店,做刀、賣刀50年,對不同的刀適合不同的需求瞭若執掌。 我在這裡買了一把中式菜刀、一把日式菜刀、一把小水果刀,加起來不到兩千塊,讓我好感謝和愉悅。 對刀具職人卻隱身巷弄,不若名店飛黃騰達,深深感到不捨!

本人磨菜刀初體驗? 因為突然間看到老婆的菜刀使用不當,已經斷刃與多處缺口(竟忘記拍下磨刀前的照片,後悔中?)因此挑了兩把來台北少數有磨菜刀服務的店面體驗看看。 金成利是位在通化街商圈滿好找的,老闆娘雖然年紀不小但仍然很有精神,親切地說明兩把菜刀要如何處理、約需多少時間與收費? 我的一把是金門菜刀,另一把是大潤發點數換的雙人牌菜刀,可能因為老婆使用時沒換剁刀而直接剁,所以金門菜刀的刀刃已呈波浪狀;雙人牌的因爲刀身薄更慘,直接破了約半個一圓銅板大小,兩把老闆娘都確認要先將原刀刃部份切除,再重新打磨刀刃部,屬於較復雜些的工序,共需半小時!!我當時聽了嚇到,真的假的也太快了吧?,結果我到巷口吃個涼麵+綜合湯,滑個手機,30分鐘後回去老闆娘已經包好刀子在等我了,好強呀? 坦白說現代人刀子鈍了、壞了,大多都是丟了再買把新的也才700~1000元,這次我ㄧ把花了200元磨(兩把共400元)好像不太值得,可是換個角度來看,物盡其用,環保愛物又可以見識到職人的技藝,很棒? 當然老闆娘也要我特別提醒老婆,這是切菜的菜刀不要剁,會用的久ㄧ點?

It broke about half the size of a round copper plate. Both proprietresses confirmed that they would cut off the original blade part and then sharpen the blade part again. This is a more complicated process, which takes half an hour! ! I was shocked when I heard it. The real or fake ones are too fast. As a result, I went to the alley to eat cold noodles + comprehensive soup, slide a mobile phone, and go back 30 minutes later. The lady boss has wrapped a knife and is waiting for me. Yeah ? Frankly speaking, modern knives are blunt or broken. Most of them are lost and then buy a new one for only 700 to 1,000 yuan. This time I spent 200 yuan for grinding (two for a total of 400 yuan). 磨的不是很理想 對於家庭用刀可能可以 業務用中式刀可能不夠鋒利不夠薄 回來切個兩下就鈍 刀尾被削掉了 開個豆腐盒都難 台北市真的找不到會磨刀的師傅了

The place has a lot of different types of cutlery & the shopkeeper is very friendly. Although she only speaks Mandarin, she can still help you find the type of knife you're looking for. I showed her a pic of a cleaver I was searching and she brought out 5 diff types and sizes and gave her own recommendations on which cutlery to use for meat or fish (esp tuna).
