非常隨性又有趣的一次無菜單體驗,貓哥的生命故事跟料理理念都十分有意思,來台東享受慢活的一餐整整待了快四個小時,學到很多奶製品的有趣知識,最印象深刻的事情是吃到一半才驚覺整份菜單是蛋奶素,完全沒有肉,但吃起來的過程可能因為酸奶的搭配完全沒意識到,十分有意思!希臘式優格跟自製的仙草茶也非常棒,如果去台東行程比較短趕時間也可以逛鐵花村的時候到攤位去帶個天然手作煙燻乳酪絲當伴手禮???

中午吃預定私廚素樸,只有我跟大廚貓哥兩人,聊著他怎麼發現各種食材運用,從原料挑選、烹飪、搭配。 他說被環境逼著要深入研究,如果在市場好的地方,那他賣奶酪就行了,而東部市場讓他更深入玩原料,不過每每玩到一個頂點,就膩了,所以才決定開私廚,料理可以在上百種食材思考搭配方式。 所有的東西一旦有固定模式、僵化制度,好處可以大量複製生產,但彈性跟運用層面就減少,適應天時地利人和的能力就下降了。而正是這些原創與失敗,才是帶領我們成長的能量。 素樸以酸奶油、起司條、希臘優格、香料橄欖油、各式香料搭配當季食材,隨主廚當日靈感製造。其中我最喜歡冷湯,平衡很好,舌頭靈的我居然喝不出主原料是什麼,是烤紅椒、番茄、牛奶、酸奶油、芫荽種子⋯⋯前一晚製作,希臘優格也真的好吃,比一般優格再稠,配上好吃黑糖吃不膩。
