年輕夫妻老闆理念很明確,想做出「天然無添加的香料咖喱」,自己調配的咖喱配方,加上費時炒製的焦糖洋蔥,加上大量蔬果熬製高湯、天然食材等等,希望把每位客人當成「我們的家人們」,店名英文叫「wendau curry」,正是台語「我們家」的發音。 家喱產品很簡單:咖喱牛、咖喱雞、舒肥雞肉、古早味紅茶,如此而已,咖喱牛味道偏南洋調味,辣度不高,嫩肩里肌彈嫩不硬,是我初訪嚐到的味道,家喱的米飯用的是「藜麥飯」,米粒飽滿Q彈好吃,全部吃完五分鐘後,口腔還是舒服的感覺。 二訪咖喱雞,咖喱不會像日式那般甘口,也沒有南洋香氣強烈,煎過的雞腿肉,經過熬煮,更加軟嫩,醬汁尾韻蔬果香氣比咖喱牛明顯,一樣精彩。另一款選用溫體雞胸肉,醃製後用舒肥方式恆溫烹調,肉嫩不柴,營養價值更能保留,黑胡椒粒香氣跟微酸開胃的醬汁非常清爽。 我特別喜歡家喱的配菜,調味簡單但不單調,切片的帶皮紅地瓜鬆軟,自然甘甜,秋葵不是切掉蒂頭,而是用「削」的,這小細節處理除了口感問題,更讓秋葵不因為汆燙而流失黏液跟營養,溏心蛋蛋黃熟度出色,蛋白也有入味,比一些拉麵名店還好吃,杏鮑菇脆彈飽水,綠花椰菜、玉米筍、紅甜椒也都很新鮮,配菜中我最喜歡小番茄,經典的梅漬醃製,非常能讓口腔解膩、轉味,最後一口我總是留給梅漬蕃茄,這真是完美的句點。 店家自己熬煮的古早味紅茶,茶香中帶有決明子香味,微糖甜度,搭配咖喱,非常舒服。家喱的調味自然,盡量呈現食物原有的風味,習慣咖哩塊、濃口咖喱味的朋友可能會不太習慣,不過熱愛咖喱的朋友一定要試試,餐點吃下來沒有太多負擔,細節處理很到位,完整度很高,年輕夫妻十分客氣親切,重點顏值都很高,我一向支持年輕人創業,這麽精彩用心高品質的店家,不能只有我知道,家喱一開始只有外帶,現在多了內用區(疫情期間,暫停開放),環境舒適,是我美食口袋名單新歡。
