看到「宜蘭」就是親切,說什麼都要會它一會,「鑑定」結果其實沒那麼宜蘭味,有一些些影子但自己的個性更多。 1️⃣「宜蘭風」元素是羹湯與肉羹肉的蒜味,而沙茶也許是參考「太祖魷魚羹」,但未使用九層塔。 2️⃣羹湯是清湯的勾薄芡版,「薄芡」就已非宜蘭風的標準樣,所以老闆在味道的取捨有自己的個性考量。 3️⃣羹味由蔬菜清甜主導,蒜味並未強出頭,口感偏light,但又放了沙茶,味覺感受會錯亂,與老闆提及此,其表示自己吃是不加的,但為迎合客群偏好,若沒事先告知預設都會加。(就是曾被客人「唸」過…) 4️⃣再訪肯定不加沙茶,因上火感(台語說「燥」)太強烈,還在用餐過程就已感覺喉嚨被束緊,可能不是大牌子吧… 5️⃣肉羹肉口感與肉味一吃就知是鮮品,老闆偷偷透露是直接跟附近攤商叫貨。吃慣塊狀口感可能會覺得片狀不過癮,但羅東「肉羹慶」也是偏肉片,只要肉味夠足就是好吃。 6️⃣用餐環境普通,感覺是把住家客廳隔出當營業場所,似乎也沒看到洗手間。
