四神湯非常棒,但是當歸羊肉湯太油、品質不穩定,有兩次吃完急性胃炎。

問了店員,並非將麵下去與鱔魚一起拌炒的炒麵,麵種更不是意麵,而是生炒鱔魚後燴麵。於是單點生炒鱔魚(無麵版本)。 雖然返回家中,熱度已非最佳狀態,但看這著色已過基本門檻,醬油、烏醋、糖炒出布朗褐色。重點鍋氣足,把洋蔥炒到焦糖化 香氣在一打開撲鼻而來。再來是難處理的鱔魚,即使無刺,但有時偏硬的軟刺仍影響口感,這個不會,可以。 有些台南的炒鱔魚意麵,口感偏甜,雖說是特色,但拿捏不當確實吃下去會有過膩感。這家倒是沒有,入口不會感受甜膩感,而是酸與甜的中和香氣。撇除鄉愁部份,我覺得可以。
