今天選的是1080的無菜單料理 實際的菜色不只這些 但沒拍到? 食材都很新鮮 調味也很用心 絕對會再回來的~~

味噌烤魚還不錯,外皮酥脆且魚肉軟嫩,還有搭配調味洋蔥、胡椒、七味粉等調味。鮭魚親子丼及鰤魚握壽司也都還蠻新鮮的。不過價位不便宜。也有提供無菜單料理的服務。

用餐環境⭐⭐⭐⭐-感覺比較像是家庭式的日式料理,距離料亭還有一段距離!一進門映入眼簾的吧台區紊亂甚至沒有提供給客人的位置,與常見的日式料理前台差很多;另外雖然有包廂,不過位於門口的桌次免強擠了12人,但位置其實非常小坐起來不甚舒服,且廁所就位於包廂內,外場客人還是得穿過所謂的包廂才可到達,這點其實蠻OOXX,不過寥甚於無,有總比沒有好,但若可以稍加改變,例如改為歐式長桌或是小一點的圓桌,且不要免強硬塞客人,相信感覺上可以改觀不少!!! 餐點新鮮度⭐⭐⭐⭐⭐-各式魚生表現都不錯,都還蠻鮮甜的,新鮮程度吃得出來! 料理手法⭐⭐⭐-這個部分就有點小意見,EX:星鰻烤(炙燒)的火侯不足,導致醬汁與魚的香氣出不來,有幾顆握壽司上面的星鰻呈現碎塊狀,感覺是硬湊合著放上去的;胭脂蝦的蝦腸沒挑除,影響口感,且胭脂蝦的溫度有點過高,略微影響口感;醋飯的調味很淡,幾乎吃不到微酸的口感;烤黑鮪下巴雖然很美味,不過整個黑嚕嚕的,其實在視覺上影響很大! 店家誠意⭐⭐⭐⭐⭐-整家店其實應該只有老闆跟一位外場(不曉得是不是闆娘)在服務整場客人,以這樣的人數能夠做出這種程度的餐點與服務,其實已經很不簡單,不過若是要更上一層樓或是做出職人品質的料理,可能還需多點人手幫忙才有辦法! 由於這次是被人招待,屬於無菜單料理,所以對菜單內容就無法追加(熊本生蠔跟海膽就下次有機會再見了),全看店家功力: 綜和生魚片⭐⭐⭐⭐-有炙燒北海道干貝、炙燒鰤魚、鮪魚、鮭魚、胭脂蝦,就是一般常見的的生魚片食材,不過都還蠻新鮮的,除了先前所提的一些缺點,EX:不夠冰...等,倒也沒啥大問題!鰤魚的口感還蠻特別,鬆軟不似鮪魚般緊實Q彈口感,若不是給人請,平常自己點到還沒機會吃到!所附的山葵雖不是現磨新鮮山葵,但至少不是市售那種便宜只有辣的便宜貨!擺盤的海帶芽其實蠻可惜的,若是有再多附上日式沙拉醬汁,就可以再變出一道小菜,而不會浪費....... 鹽燒海老⭐⭐⭐⭐⭐-口感Q彈,滿滿的蝦膏,火侯也控制的不錯,不會過老或外表有燒焦的現象! 醬烤黑鮪下巴配鹽烤黑鯧⭐⭐⭐⭐-老實說這擺盤倒是蠻令人吃驚,兩種完全不同手法的烤魚放在一起,怎麼想都不搭嘎,其實還蠻台式作風的! 生猛龍蝦海鮮鍋(名字是我亂取的)⭐⭐⭐⭐-龍蝦大概有3-4隻吧、還有白蝦、鮭魚(對,又是鮭魚),不過龍蝦個頭並不算太大,加上以先前生魚片新鮮程度,感覺應該很不錯,部過由於人數關係,所以就沒分到(殘念),高湯是採用昆布高湯搭配煮過的海鮮剛剛好,不夠的話店家也很樂意的再添加! 醬燒扇貝⭐⭐⭐⭐⭐-老實說,吃扇貝的機會並不多,因為曾經吃過硬到像嚼橡皮筋口感的扇貝,自此就沒特別好印象!不過這的扇貝處理的真的不錯,雖有醬汁,但不會搶走扇貝鮮甜的口感,反而有提味的效果;另外扇貝處理的火侯也是恰到好處,軟嫩好入口,重點是泥腸的部分處理的也非常乾淨,不會有沙沙的異物口感! 壽司拼盤⭐⭐⭐-有星鰻握壽司、2種花壽司(嚴格來說應該只有1種,因為除了外面的蝦卵不同,裡面包的東西都一樣),這道菜嘛,基本上就是填飽肚子用的,除了先前提的醋飯跟星鰻的問題之外,其他就沒啥特別印象! 蘿蔓炸蝦天婦羅⭐⭐⭐⭐-來不及照相,所以就只能憑印象;將整隻天婦羅炸蝦(頭、蝦身是分開炸的)放在蘿蔓生菜上,周圍還有許多天婦羅的麵衣陪襯,再佐以店家特調醬汁,吃起來還算清爽,不會太油膩!天婦羅炸蝦雖然沒有過多的油耗味,但麵衣其實過重,而且炸的顏色偏深(有點久),加上特調醬汁也是以甜味為基底的美乃滋醬,不是傳統天婦羅醬,所以一隻其實剛剛好,若再多的話就稍嫌膩口了!但若整體一起吃(包含炸蝦、麵衣、生菜、醬汁),其實表現就還不錯,不過蠻考驗嘴巴大小的!!! 綜合水果盤⭐⭐⭐⭐⭐-該甜的甜、該酸的也不遑多讓,總之新鮮就是王道! 店家招待鯛魚燒⭐⭐⭐⭐-內餡的紅豆餡有點偏甜,沒甚麼紅豆顆粒感,與一般街邊小吃紅豆餅內餡的口感略有不同,不能說誰對誰錯或誰比較好吃;但外表烤到有些燒焦,而且每個鯛魚燒上色程度不均,這點就蠻有意見了,代表火侯控制得再加強一下了!
