★ ★ ★ ★ ★ 湯麵湯頭濃郁,沾麵醬會稍微稠了一些,但入口也是相當滑順,麵的口感Q彈有勁,肉品軟嫩帶有一種炙燒香氣,最最驚豔的是帶有酒香的糖心蛋,整碗吃光光,個人很喜歡一定會再訪?

★ ★ ★ ★ ★ 沒什麼好提的,好吃得前面都說了,我只補充一點,超乾淨,豆芽很漂亮,口味適當沒有走火入魔,吃完瞬間在我心目中奔上第一名的位置。
整整齊齊,乾乾淨淨,味道該有的都有,整體而言已經屬於資優生高水準表現。

抱怨一下,某喊水會凍結的麵店得豆芽菜炒起來看起來就很髒,還有不少綠豆殼,雖然生意好,更不提味道近年來走鐘得很明顯還一堆人捧,我從最早的店面吃起每次吃都不同味道我不覺得這是一個被人追捧成領先者的表現就是。

Complain about it, the bean sprouts from a noodle shop that shouted that the water would freeze would look dirty when fried, and there are still a lot of mung bean shells. Although the business is good, not to mention that the taste has clearly gone by in recent years, and a lot of people are holding it. I eat it from the earliest store and it tastes different every time I eat it. I don't think this is a manifestation of being sought after as a leader.

泡系鮭魚拉麵真的很猛⋯整個湯頭可以喝到鮭魚的香味,那香味真的可以說是唇齒留香,原本很害怕魚介湯會有腥味,但這碗完全讓我驚豔,仔細品嚐還有奶香,香吉士跟檸檬片有畫龍點睛之筆,在炎熱的夏天增添清爽的感覺,旗魚肉也蠻好吃的!比較可惜的是我覺得叉燒肉味有點重(本人原因,對四隻腳動物肉味很敏感),大家可以來嘗試一下,五顆星我給4.5??
純水吉貝清湯拉麵,因為先吃了泡系鮭魚湯,所以在喝這碗會稍顯遜色,只是稍微而已。湯頭有雞肉、叉燒、小干貝、魚叉燒,筍絲、海苔、溏心蛋,一碗只要190$,真的可以說不惜重本了?湯頭也是喝的出來的鮮甜,問題一樣在豬肉叉燒,豬味好重哈哈哈哈

文蛤全部只有 8 顆,
然後超過一半
沒有完全煮開,
都要用力掰開
才能吃到裡面的肉,
還有一顆殼直接
斷開的我沒吃。

就是沒有完全煮開的。)
然後,湯有點鹹。
跟麵本初之前的
其他品項相比會較鹹。
總之,
這碗算是麵本初
歷來品項裡面,
個人比較不喜歡的一碗...
不過這只代表我的個人意見,
也許有人會覺得這是麵本初
裡面數一數二的代表作品,
畢竟拉麵的口味是很主觀的。

★ ★ ★ ★ ★ 蝦鮭魚沾麵、魚貝清湯、叉燒飯
沾麵、拉麵麵體皆添加全立粉,都帶有捲度,巴湯力都不錯,但沾麵的粗度及捲度較高,整體吃起來最喜歡。
沾麵汁上桌溫度極燙,上頭浮著一層魚油,吃起來帶有蝦膏、鮭魚味道,兩者融合的很棒。最後加碗白飯,油脂與澱粉的搭配,甜潤的乳香味跑了出來,可以單吃好幾碗。
拉麵湯非常乾淨,單純的魚湯配上香菇風味油。但可能太乾淨了,些微的煮麵水也會嚐得出來,變得有點像是鱸魚麵線。
叉燒給的很大方,豬、雞、魚三種都有。魚的部分是生魚片,泡進熱熱的沾麵汁,更加提升鮮甜度。雞是選用雞腿肉,油脂較高,但中規中矩。豬叉燒是低溫烹調,不柴但調味偏鹹。
溏心蛋有添加白蘭地去浸泡,稍微有點搶戲。
叉燒飯則是前述三種叉燒的邊料去製作,比單一肉種的叉燒飯吃起來口感更加豐富,但不膩口。
下次再來想試試泡系及醬油口味。

★ ★ ★ ★ ★ 狸匠系列旗下的魚介拉麵,自助機台點餐,座位不多,大概12席,點了雞湯拉麵以及沾麵,雞湯的湯頭,真的讓我驚艷,看似濃郁,卻不死鹹,有別於其他的拉麵湯頭,可以一喝再喝,膠質好像也頗多的,也有淡淡的奶香味,內附肉品的部分有雞叉燒跟豚叉燒兩種還有厚切的旗魚片,都軟嫩可口,沾麵的沾醬也算相當濃稠,而沾麵的麵條相比拉麵麵條來的粗些,豁著沾醬真的過癮,白蘭地糖心蛋則是一整顆的

狸匠流派下
星期一下午時段來店,不需等候,直接點餐入座。
主打魚貝口味的湯頭。
菜單上有雞湯、醬油兩款,以及文蛤、鮭魚為主。第一印象就像是流派下的其他店,湯頭顏色和方式是吃過的雞骨熬煮派,再加場柑橘色澤的湯頭,可以說是精緻小巧。
這次點的是
文蛤醬油拉麵
筍干
共$280
配料:叉燒兩片、蔥絲一撮、筍干一條、溏心蛋半顆,以及文蛤八顆。
湯頭:原本預期是只有醬油清湯的鹹味,確實入口時是如此,但是隨後而來的是文蛤的鹹度,把嘴巴裡頭的一喉湯增加厚度,卻不刺激喉頭,往下喝,在尾聲時,文蛤的厚度提升,漸漸像是傳統小吃醬漬蛤一樣,你能吃的海鮮的鹹度,但又讓你一吃再吃,喜歡重口味的可以試著把湯喝完。
筍干:香油的味道明顯,醬油的甜味被裹上的香油氣帶出。
麵體:偏硬,牙口不好的人,需要特別用門牙咬一下。
文蛤:就像是你不會去注意的人,但往往他們是主角一般的綠葉角色,嚥一口湯配上文蛤,鹹鮮滿足,兩條並行的線,可以吃出食材的新鮮。
溏心蛋:這應該是貍匠派系下的特點,濃厚的白酒釀蛋,一入口能感受到有層次的酒香,應該是白蘭地的或是其他白酒的味道,比較不習慣食物裡有酒香,隨口配了一口筍干和叉燒,叉燒被筍干的香油味帶出本身的獨特舒肥香氣,酒香被壓了下來,藏在舌下入喉。
整體風格:家常,一入口不刺激,是一陣一陣的煙在口中的感覺,會再二訪的店,以及當成日常美食的店

★ ★ ★ ★ ★ The broth is flavorful. The taste is unique with a light hint of fish. But the waiting area is too tiny. There should be a display telling customers which number of order they are serving right now as customers just wait without knowing when will be their turn.
