剛好今天有機會來試試看
原來他們有「脫油機」
炸過的食材，都會放進
脫油機裡離心力轉一陣子
減少了很多吸附在食材上
的油膩，所以是有
健康取向一點。
但是如此的話就考驗
老闆的技術經驗
及拿捏食物多或少
在油槽裡炸的時間差了
又因為有脫油
減少了油質濕潤感
所以人多的話會有
品質不太穩定之憾
米血、米腸、豆干
之類的就會較乾硬
對於蔬菜類去很多油
就非常棒的！
