多處商家也在有限的攤位空間，迎合現代化，亮麗的光線，潔淨的擺設，冷凍設備冷氣也漸漸設置，生鮮食材品質優等，多家榮獲衛生檢驗標章。
雖然仍不及現代超市，但是攤販的濃厚人情味，親切的問侯，不厭其煩解說食物的烹調處理，額外的贈送蔥蒜辣椒等小東西，這些都是傳統市場，仍然吸引消費者採購的因素。
更重要的是，東市場裡面，還有隱藏版的台南美食，也幾乎只有道地的台南人才知道的美食。
