點了芋頭跟芋頭麻糬餅,都覺得還好,皮的部分表現不酥,芋頭味道溫和但不夠突出,類似於一般芋泥捲,我期待有更好的表現。

台式的溫柔:鹹蛋糕 這一趟台北之行最後的行程是從烏日搭高鐵回台南,而在搭高鐵的過程中看到玉珍齋的水蒸鹹蛋糕便買了兩盒;雖然不是第一次吃鹹蛋糕了,而且在我的古早味字典裡面似乎沒有放入這個名詞。 我想是因為地區的不同所以南部較少見到吧,至少在我小時候不太有機會吃到鹹的蛋糕;倒是肉鬆麵包比較偏向這種口感,和蛋糕類比較接近的也就只有海綿蛋糕跟長崎蛋糕。 水蒸的鹹蛋糕,吃起來蓬鬆柔軟中又帶點濃郁的油蔥與肉燥香氣;不過我是沒有吃到筍丁啦,想來每家的配方都不盡相同。 查了一下資料,才知道這是日治時代時台中仕紳為了要接待主持縱貫鐵路通車典禮的日本天皇的親弟弟;戴仁親王而誕生的,所以水蒸鹹蛋糕那份狀似和果子蛋糕的神髓想必就是緣由於此。 玉珍齋的水蒸鹹蛋糕整體吃起來偏向柔軟蓬鬆,沒有過重的肉燥油蔥膩味;少了重口味以便突顯海綿蛋糕本體的甜美Q彈,多了兩分西式少了一分日式與一分台式。 算是中西日三方薈萃的表現,但對我而言卻不夠台;油蔥酥與肉燥應該是這一道糕點的重要精神,紅蔥酥的味道還蠻重的,但是肉燥的香氣似乎被遮蔽了。 大體而言上還算可口,只是沒吃到文獻內記載的筍丁有些許遺憾;而且既然是台灣的古早味,覺得肉燥的比例似乎少到有點都快看不見了(還是根本沒有放肉燥?看官方網站似乎只有紅蔥酥的香氣與海綿蛋糕質樸的甜來予一貫之)。 但對於想吃的清淡一點又想要吃的懷舊古早的感覺的人來說,不啻為一樣好選擇。

The steamed salty cake tastes fluffy and soft with a strong aroma of shallots and minced meat; but I haven't eaten the diced bamboo shoots. The recipe is different for each store. I checked the information and found out that this was born by the Taichung gentry during the Japanese Occupation era in order to receive the younger brother of the Emperor of Japan; Prince Dai Ren who presided over the opening ceremony of the railroad. So the steamed salty cake looked like wagashi. The essence of the cake must be due to this. Yuzhenzhai’s steamed salty cakes tend to be soft and fluffy as a whole, without overly heavy minced meat and greasy onions; the heavy flavors are missing to highlight the sweetness of the sponge cake itself. It is two points more Western and one point less Japanese and Japanese. One point desktop. It is a trio of Chinese, Western and Japanese, but it is not enough for me; short onion crisp and minced meat should be the important spirit of this cake. The taste of red onion crisp is quite heavy, but the aroma of dried meat seems to be obscured. Up. Generally speaking, it’s quite delicious, but it’s a pity that I didn’t eat the bamboo shoots recorded in the literature; and since it’s the ancient flavor of Taiwan, I feel that the proportion of dry meat seems to be so small that it’s almost invisible (still not put at all). But for those who want a lighter taste and the nostalgic feeling of eating, it is no less a good choice.
