★ ★ ★ ★ ★ 裕農路在地熱炒鱔魚老店~來的時間約傍晚5點多,點了一碗花枝意麵,花枝鮮又Q彈(花枝放蠻多的),意麵軟Q滑口,羹湯酸甜,加點辣椒粉、辣油、黑醋,味道更濃郁⋯來此嚐鮮一下台南特定口味!

吃過炒意麵就能明白知道什麼是鍋氣,它熱氣滾滾,有豐富的滋味。相反的缺少鍋氣,就是東西被煮熟了,也有味道,但是軟趴趴,非常扁平。
有鍋氣的鱔魚意麵是基本的,至於各家特色和差異就在調味和料上展現:有的鱔魚脆,有的要熟一些,會偏軟但是彈牙;有的洋蔥多,有的少,有的洋蔥炒軟,有的也是脆;有的醬鹹香,有的醬偏酸。不變的是都偏甜,且要炒點辣椒。
福來的偏酸,但只留下醋般的香氣,入口依然是鹹甜鹹甜;醬汁攪起來是清的,很稀薄,吃到嘴裡卻有點厚度,非常神奇。
炒豬心最好吃的部分居然是薑片,每一片都像鹹酥雞攤的配菜,被熱油煸得像炸過,已經沒有薑的生味,只剩下麻油香氣。

★ ★ ★ ★ ★ 第一次吃是在深夜點的uber eats,時間是23:00左右,那一次吃超級驚艷的好吃,意麵的鍋氣十足有夠香。
於是第二次在用餐時間前去,是週末的晚上六點,經驗就不怎麼好了。現場的客人相當多,內用也是一位難求,同時外帶的客人也相當多,零散的站在店裡。
同個時間在等待餐點的客人至少20位以上,真的相當多。我們大約等了一小時才拿到餐點。
等候的時候有看到老闆的做法,是一口氣煮了很多意麵,一起炒一炒之後再加上先前炒好的鱔魚或是魷魚。吃的時候是也覺得不錯啦,但麵的鍋氣就少了許多,味道跟前一次深夜外送比就差了很多。
但整體還是好吃的,鱔魚意麵的口味不會過酸醋過重,鱔魚跟魷魚都很脆很好吃。其他餐點有點麻油腰子跟豬肝湯,麻油腰子很推薦,很脆很新鮮,想比之下豬肝湯就不怎麼樣,當天喝到的豬肝煮的過老了。
下次還是會想回訪,但可能會選擇下午三四點或是晚上九點過後前去用餐。
也奉勸大家不要在用餐巔峰時期去吃,或是打電話過去。店家在巔峰時期根本沒有時間接電話,放著一直響(也是有點吵)。

So the second time I went before meal time, at 6pm on the weekend, the experience was not so good. There are quite a lot of customers on site, and it is hard to find one for internal use. At the same time, there are also quite a lot of customers who take out, standing scattered in the store.
There are at least 20 customers waiting for the meal at the same time, which is quite a lot. We waited about an hour for our meals.
When I was waiting, I saw the boss's method, which is to cook a lot of pasta in one go, fry them together, and then add the previously fried eel or squid. When I eat it, I also feel good, but the noodles are much less steamy, and the taste is much worse than the previous late-night delivery.
But the overall is still delicious, the eel pasta is not too sour and vinegary, and the eel and squid are both crispy and delicious. The other meals are a bit of sesame oil kidney and pork liver soup. Sesame oil kidney is highly recommended, very crisp and fresh. Compared with the pig liver soup, it is not so good. The pig liver I drank that day was overcooked.
I will still want to visit again next time, but I may choose to dine at 3 or 4 pm or after 9 pm.
I also advise everyone not to eat at the peak of the meal, or to make a phone call. The store has no time to answer the phone at its peak, and it keeps ringing (and a bit noisy).
